One of the teachers in school made this (as a sweetner for an extra meeting that was called), and it was truly delicious!

  • 300 g whole wheat flour
  • 1 tablespoon baking powder
  • 2 teaspoons ground cinnamon
  • 125 g soft brown sugar
  • 4 tablespoons clear honey
  • 250 g dates, stoned and choppped
  • 175 ml apple juice
  • 120 ml vegetable oil
  • 2 eggs, beaten
  • 250 g apples, peeled, cored and chopped
  • 50 g shelled walnuts, chopped

How to cook:
  1. Grease a 20cm square cake tin, line with greaseproof paper, then grease the paper.
  2. Mix the flour, baking powder and cinnamon together in a bowl. Put the sugar, honey, dates (stoned and chopped) and apple juice in a pan and heat gently until the sugar has dissolved. Remove from the heat and leave to cool slightly, then add the flour with the oil. Beat until smooth. Add the eggs (beaten) and apples (peeled, cored and chopped) and mix thoroughly.
  3. Turn the mixture into the prepared tin, then sprinkle with the walnuts. Bake in a preheated moderate oven (180C/350F/Gas Mark 4) for 1hr to 1hr 15 mins until the cake springs back when lightly pressed in the centre. Turn out onto a wire rack, peel off the paper, turn the cake the right way up and leave to cool.
  4. To freeze: Wrap the cake in a polythene bag, seal and label and freeze for up to 4 months.
  5. To thaw and serve: Unwrap, place on a serving plate and leave to stand at room temperature for 4 hours.

  • 200g fresh dates pitted and chopped (or use dried)
  • 1 tsp baking soda
  • 125g butter softened
  • 1 cup or 250g Chelsea Caster Sugar
  • 1 egg
  • 1 tsp Vanilla essence
  • 2 apples cored and grated
  • 1 cup or 125g stardard flour
  • 1/2 cup or 60g self raising flour
  • Topping
  • 75g butter
  • 1/2 cup or 95g Chelsea Soft Brown Sugar
  • 1/3 cup or80ml milk
  • 1 cup shredded coconut
How to cook:
  1. Grease a 20 cm round spriingform tin and line with baking paper - preheat oven to 180°C. Put the dates in a small saucepan with 1 cup of water and just bring to the boil - stir in baking soda then remove from the heat. Set aside until just warm. Cream butter and sugar until light and fluffy, then add egg and vanilla and beat until combined. Stir in date mixture and the apple then the sifted flours until almost smooth. Spoon into the tin and smooth the surface. Bake for 40 minutes. Combine the topping ingredients in a small saucepan and stir over low heat, until butter is melted and ingredients well combined. Remove the cake from the oven and smooth the topping over the top. Return the cake to the oven for 20-30 minutes or until the topping is golden and the cake is cooked through. Remove from the oven and leave the cake in the tin to cool completely then turn out.

  • 2 apples, finely chopped
  • 1 cup chopped dates
  • 1/2 teaspoon bicarbonate of soda
  • 1 cup boiling water
  • 185 gram butter
  • 1 cup caster sugar
  • 1 egg
  • 2 cup plain flour
  • Serving Size: Serves 8
How to cook:
  1. Grease a 23cm square slab pan, line base and sides with paper; grease paper well. Preheat oven to 160°C.
  2. Combine apples, dates, soda and water in bowl, cover, cool.
  3. Cream butter and sugar in small bowl with electric mixer until light and fluffy, then beat in egg. Transfer mixture to large bowl, stir in the sifted flour and apple mixture.
  4. Pour into prepared pan. Bake for about 1¼ hours. Stand 5 minutes before turning on to wire rack to cool.

Apple Date Nut Bread

This Apple Date Nut Bread is one of my favorite quick breads in the fall. It's packed with all the warm flavors of autumn and apples that we all love.

  • 4 tablespoons butter, melted
  • 1 cup pitted and chopped dates
  • 1/4 cup sugar
  • 1/4 cup dark brown sugar
  • 3/4 cup boiling water
  • 2 teaspoons vanilla extract
  • 2 eggs, beaten
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups all-purpose flour
  • 1 cup chopped fresh apple (Use whatever you like to eat. I generally use 1 medium sized apple. )
  • 3/4 cup chopped walnuts
How to cook:
  1. Place butter, sugars and dates to a metal mixing bowl. Pour the hot water over the mixture, and stir until combined. Let stand 10 minutes to enable the dates to soften.
  2. Whisk in the beaten egg, baking powder, salt, vanilla and cinnamon until well combined. Stir in the flour in small batches until incorporated. Fold in the apples and the walnuts.
  3. Grease a bread pan with cooking spray and pour in the bread mixture. Bake in a 350 degree oven for 50-60 minutes or until a knife inserted comes out clean.
  4. When the bread is done, remove it from the oven and cool it completely. Wrap the bread in plastic wrap and let sit for 24 hours before serving.
