Ingredients:
- 125g butter
- 125g brown sugar
- 1 egg
- 1 cup self-raising flour
- 3/4 cup dates chopped
- 1/2 cup walnuts chopped
- 1 tsp vanilla essence
How to cook:
- Preheat oven to 150C.
- Melt butter and brown sugar in a pan until sugar is dissolved.
- Sift flour into a separate bowl.
- Cool slightly and mix through flour, vanilla, dates, nuts then egg.
- Mix until combined.
- Pour into a lined or greased slice tin and bake for 20 minutes at 150C.
- Remove slice from tin and let it cool on a wire rack.
- Cut into slices and store in an air-tight container.

Ingredients:
- 125 g butter
- 1/2 cup brown sugar
- 1 cup coconut
- 1 cup self-raising flour
- 1 pinch salt
- 1 cup dates chopped
- 2 tbs golden syrup
How to cook:
- Mix sifted dry ingredients together into a bowl.
- In a saucepan, melt butter and syrup until butter has melted.
- Add to dry ingredients and mix well.
- Spread mixture evenly into a greased lamington pan.
- Bake at 170C for 30 minutes or until golden brown.
- Cool and cut into fingers or squares.

- 113 g (4 ozs) unsalted butter
- 113 g (4 ozs) dark muscavado sugar
- 150 g (1 cup) plain flour
- 90 g (1/2 cup) chopped dates
- 45 g (1/4 cup) chopped pecans
- 1 egg (beaten)
- 1 tsp vanilla extract
- pinch salt

- Pre-heat the oven to 175C (155C fan forced).
- Grease and line a 17cm x 27cm slice tin, and set aside.
- Place the butter and sugar into a medium saucepan.
- Gently stir the saucepan contents over a low-medium heat until the butter melts, then increase the heat to medium and bring the mixture to a boil.
- As soon as the mixture comes to a boil, remove the saucepan from the heat and allow it to cool slightly. I normally do this step, then chop my nuts and dates whilst the mixture cools a little
- Add the remainder of the ingredients to the saucepan, and mix to combine. You should have a soft dough.
- Press the dough into the lined tin with the back of a silicone spatula, and level out the top of the slice as best you can.
- Bake for 20 minutes, until the slice is slightly risen and golden brown.
- Allow to cool completely in the tin, then slice into 16 pieces with a sharp knife.
- Store in an airtight container for up to 1 week.

- 1 cup pitted dates (tightly packed to fill the cup)
- ½ tsp cinnamon
- ½ tsp ginger
- 1 pinch salt
- ¾ cup vegan butter
- 2 tbsp brown sugar
- ½ cup + 2 tbsp plain gluten-free flour
- ¾ cup oat flour
- 1 cup oats
- 1 tsp cinnamon

- Preheat your oven to 356°F /180°C (fan oven setting*).
- Place dates and water in a small pan.
- Add the date filling spices (cinnamon, ginger) and salt.
- Cook for 5 minutes until softened and leave to cool. If desired, blend with a hand blender until smooth.
- In a large bowl, mix all your crumble ingredients (except butter).
- Then add butter and use your hands to mix it in until crumbly consistency. You know you’ve mixed it well when no large flour specs can be seen in the mixture.
- Spoon approx. ¾ of your crumble mixture onto a lined baking tray. Use your fingers to press it down tightly.
- Then use a silicone spatula (or a spoon) to spread the date filling over your base layer. Try to get it as even as possible, not forgetting the corners.
- Top off with the remaining crumble mixture and almonds.
- Bake for 30 minutes and let it cool before slicing & serving.
