- 2 zucchini, quartered and sliced
- 1 onion, sliced into rings
- ½ cup all-purpose flour
- ½ cup cornmeal
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- ¼ teaspoon garlic powder
- 1 cup vegetable oil for frying

- Place zucchini and onions in a medium bowl and mix together.
- In a small bowl mix flour, cornmeal, salt, pepper and garlic powder.
- Pour dry mixture over zucchini/onion mixture, cover bowl and shake well. Let mixture sit for about 30 minutes; a batter will form on the vegetables.
- In a medium skillet heat oil over medium heat. When oil is hot add breaded vegetables and fry, turning to brown evenly.

Recipe from box of Argo Cornstarch in the early 80's. This batter is light and tasty. Posting recipe as request from one of my sons. This batter is great for zucchini, but can be used on any thing you would like to fry up! Many reviews complain of the lack of seasoning. I have taken the garlic powder up to 1 tsp. and it helps, a dash of hot sauce works well too. If you must, sprinkle lightly with additional salt immediately after removing from the frying oil. Another tip - I prefer the thinner batter for a lighter and crunchier coating on the veggies (the thicker batter just seems to be too doughy for our tastes).

- In a large mixing bowl, combine 1 cup self-rising flour, 1 well-beaten egg, 1 cup milk, and 1/4 cup vegetable oil. Stir completely, or blend with an electric mixer. Have your zucchini rounds prepared for cooking. Heat 2 inches of oil in an electric deep fryer or a pot on the stove to somewhere between 345 degrees and 375 degrees. With tongs, dip pepper pieces in batter, allowing excess batter to drip into bowl, and then transfer to hot oil. You may fry several rounds at the same time. Fry until golden brown on both sides, and then remove with tongs or other utensil and place on paper toweling to drain. When all pieces are fried and removed, pat the upper side to remove any further excess oil. Now, place the Battered Deep-Fried Zucchini Rounds on a nice serving dish, and serve with Surfin' Seafood Cocktail Sauce or ketchup. Terrific!!!

- 200 grams / 7 oz all-purpose flour
- 1 teaspoon table salt

- Rinse the zucchinis and remove the stems and bottoms. Cut into long slices that are about ½ cm thick (⅕-inch).
- In a mixing bowl using a whisk, stir the flour, salt, and pepper to combine. Keep stirring while you pour in the soda water. Stir well until no flour lumps remain in the batter.
- Cover bowl with plastic wrap. Place the batter in the fridge and rest for 1 hour.
- Half fill a large frying pan with frying oil. Heat over high heat until oil becomes sizzling hot. Or until the temperature reads 180°C (356 °F) on an instant-read thermometer.
- Dip a zucchini slice into the batter, shake to remove excess batter, leaving only a very thin coating, and add to the hot frying oil. Give it a few seconds to form a crust before adding the next slice (so they won't stick together). Fry the zucchinis in batches without overcrowding them in the pan. Cook for a couple of minutes until they become deep golden (almost brownish in color) all over. Transfer on paper towels. Do not stack them while they're hot, so they won't get soggy.
- Serve with grated Greek Kefalotyri cheese on top. You may use Parmesan or Pecorino cheese instead.
