- Crumble Topping:
- 185 g (1¼ cups) plain (all purpose) flour
- 1 teaspoon baking powder
- 125 g (1 stick) butter
- ¾ cup (165 g) caster (superfine ) sugar
- Apple Filling:
- 5 apples (I used a combination of granny smith and royal gala)
- 1 tablespoon butter
- ½ teaspoon ground cinnamon
- 1 tablespoon sugar
- Base:
- 100 g (0.9 stick) butter
- 110 g (1/2 cup) caster (superfine ) sugar
- 1 egg
- 1 cup plain (150 g) plain (all purpose ) flour
- 1 teaspoon baking powder
- 1 tablespoon milk
How to cook:
- Preheat oven to 160 deg C (320 deg F). Grease and line a 20 x 30 cm slice pan.
- To make the crumble: mix the flour, baking powder, and sugar in a bowl. Rub in the butter until it resembles fresh breadcrumbs.
- To make the apple filling: peel and chop apples. Place all ingredients into a saucepan and cook over low heat for 10 minutes, or until softened. Allow to cool.
- To make the base: Combine the butter and sugar in an electric mixer and beat until creamy. Add the egg and beat well. Fold through the flour, baking powder, and milk.
- Spread the base in the bottom of prepared pan. Top with apple filling, and then spoon over the crumble topping. Bake in oven for 40 – 50 minutes or until golden.
- Serve dusted with icing (confectioners) sugar.

- 1 cup organic plain flour
- 1 cup organic self-raising flour
- 1/2 cup organic caster sugar
- 125 grams organic butter (softened)
- 1 large organic egg
- 1-4 tablespoons filtered water
- 8 large organic granny smith apples
- 2 cups filtered water
- 1 cup organic caster sugar
How to cook:
- In a bowl, rub the butter into the flour and sugar until it resembles breadcrumbs. Add the egg and water, a tablespoon at a time while you knead it into a smooth dough (you can also do this in a mixer).
- Cover and refrigerate 15-30 minutes.
- Meanwhile, peel, core and chop the apples. Add them to a large pot with water and sugar and bring to a boil. Cook, stirring occasionally, until the apples break down. Set aside to cool.
- Divide the dough in two and roll out on a well-floured surface two slabs that will cover a 20x30cm slice tin.
- Place one layer of the dough in the tin, cover with the apples, and layer the second dough piece over.
- Sprinkle with sugar and bake 40-60 minutes - 180°C just until the top is golden brown. Leave to cool thoroughly before slicing.

- 6 Granny Smith apples, peeled, cored and sliced
- 100g of caster sugar
How to cook:
- Place the apples in a saucepan with the sugar. Cover and set over a low heat until the juice begins to come out of the apples. Slightly increase the heat and cook until the apples are soft, then set aside to cool
- Preheat the oven to 165°C/ 325° F/ gas mark 3
- For the shortbread base, cream together the butter and sugar, add the egg and milk, then mix in the flours, baking powder and wheatgerm. Spread over the bottom of a greased cake tin (approximately 20cm x 20cm x 5cm) and bake in the oven for 10 minutes. Leave to cool in the tin
- Make the crumble by mixing all the dry ingredients together, ie. everything except the butter. Put the butter in a small saucepan, melt over a moderate heat, then pour it over the dry ingredients and mix together
- Spread the apple over the shortbread base, then sprinkle the crumble mix over the top. Bake for 10-15 minutes until lightly golden
- Serve the apple crumble slice warm with a quenelle of vanilla ice cream

- 1 pack Greens English Tea Cake Mix
- 1 cup desiccated coconut
- 125g butter or margarine, melted
- 1 x 440g tin pie apples
- 1 x 300ml carton sour cream
- 2 eggs
