Vegan Avocado Ice Cream

Vegan Avocado Ice Cream

  • 14 ounces Canned Coconut Cream ((400ml, 1 Can) Unsweetened)
  • 14 ounces Canned Coconut Milk ((400ml, 1 Can) Full Fat, Unsweetened)
  • 1/2 cup White Granulated Sugar ((100g))
  • 1/4 cup Maple Syrup ((60ml))
  • 1 Tablespoon Lemon Juice
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Salt
  • 2 Medium Ripe Avocados (Peeled and seeded)

How to cook:
  1. At least the night before, place the bowl of your ice cream maker in the freezer to freeze. When your ice cream maker bowl is frozen, then proceed with the recipe.
  2. Place the coconut cream, coconut milk, white sugar, maple syrup, lemon juice, vanilla, salt and avocados into the blender jug.
  3. Blend until smooth.
  4. Transfer to your ice cream maker and churn according to manufacturer instructions until it reaches soft serve consistency. Depending on your ice cream maker this could take anywhere from 20-45 minutes.
  5. Once it reaches soft serve consistency transfer the ice cream to a loaf pan and smooth down with the back of a spoon. Cover and place into the freezer for several hours until completely set.
  6. Heat up an ice cream scoop in some hot water and scoop the ice cream and serve.

  • 4 avocado* (medium-sized)
  • 1 cup pistachios
  • 1 cup coconut cream
  • 2 tBsp honey ((or maple))

How to cook:
  1. Blitz the pistachios in a blender/food processor to obtain a flour-like consistency.
  2. Open up the avocados, scoop out the flesh & add it to the pistachio flour.Note: To make this dessert more fun, you can use the avocado shells as serving cups. If you do this, make sure to scoop out the flesh carefully so you keep the shell intact. You can also keep the seeds.
  3. Add the coconut cream and honey to the pistachios and avocados and blend them well until you obtain a creamy mixture.
  4. Serve in cups or the avocado shells (see video) and put in the freezer. Keep for at least 30-60 minutes so the cream can begin to properly set. You can also keep it overnight till the cream is more frozen.
  5. If completely frozen, let it out of the freezer for about 30 minutes so it softens. Enjoy your avocado ice cream!

How to cook:

  4. Add honey to avocado meat. Mix thoroughly with a spoon.
  5. Put mixture in a blender.
  6. Add coconut milk, lime juice, and salt to the mix.
  7. Blend on medium until you get a nice smooth consistency and all ingredients are blended completely.
  8. Place mixture in ice cream maker or a freezer safe bowl and freeze for a minimum of 2 hours or overnight.
  9. Once frozen, scoop your preferred amount into a bowl and dig in!
