Beef & Broccoli Stir Fry
We love this beef and broccoli stir fry. It's such a simple dish to throw together, and versatile, too - swap the steak for chicken breast or tofu if you like!
Total time: 30 minutes
Prep time: 10 minutes
Yields: 4 servings
Cuisine: Chinese
Number of ingredients: 14
Ingredients:
  • 250 g medium egg noodles
  • 2 tbsp. sesame oil
  • 2 rump or sirloin steaks, roughly 200g each, fat trimmed and cut into 1cm slices
  • 1 1/2 tbsp. cornflour
  • 1 red onion, halved and thinly sliced
  • 400 g purple sprouting broccoli, cut into thirds widthways
  • 100 ml black bean sauce
  • 2 tbsp. soy sauce
  • 1 1/2 tbsp. rice wine vinegar
  • 4 cm piece ginger, peeled and finely grated
  • 3 cloves garlic, crushed
  • 1 red chilli, finely diced (remove seeds if you want less heat)
  • 4 spring onions, trimmed and finely sliced
  • Lime wedges, to serve
How to cook:
  1. Cook the noodles to pack instructions. Drain and run under cold water until cool to prevent them from sticking together. Set aside.
  2. Toss the steak slices in the cornflour. Heat 1tbsp of the oil in a wok over high heat. Once hot, add the steak and stir fry for 3-4 minutes, until golden brown all over but still slightly pink in the middle. Transfer to a plate and set aside.
  3. Return the wok to high heat with the remaining oil. Add the onion and broccoli and stir fry for 4-5 minutes, until golden brown. Meanwhile, mix the black bean sauce, soy sauce and vinegar together in a jug with 3tbsp water. Add the ginger, garlic and chilli and stir fry for a further 1 minute. Add the black bean sauce mixture and cook for 1-2 mins until the broccoli is tender and the sauce has thickened. Add a splash more water if needed.
  4. Return the steak to the wok with the noodles and spring onions. Toss together until everything is piping hot. Divide between 4 plates and serve with lime wedges.
