Ingredients:
- 1/3 c. low-sodium soy sauce
- Juice of 1/2 lime
- Zest of 1/2 lime
- 2 tsp. toasted sesame oil
- 2 tbsp. packed brown sugar
- 1 tbsp. freshly grated ginger
- 2 cloves garlic, grated
- 1 green onion, sliced
- 1/4 tsp. freshly ground black pepper
- 1 lb. sirloin steak, sliced very thinly against the grain
- Marinated sirloin, drained
- 3 tbsp. cornstarch
- 3 tbsp. peanut oil, divided
- 1 dried red chili, thinly sliced
- 2 tbsp. sesame seeds, divided
- 2 cloves garlic, minced
- 1 green onion, thinly sliced, plus more for garnish
- Pinch kosher salt
- 1 large head broccoli, cut into florets
- 1 c. low-sodium chicken broth
- 2 tbsp. hoisin sauce
- 1/3 c. reserved marinade
How to cook:
- In a medium bowl, whisk together marinade ingredients except for steak until fully combined. Reserve 1/3 cup marinade and set aside. Add steak to medium bowl and toss until evenly coated. Let marinate for 20 to 30 minutes.
- In a large bowl, toss together cornstarch and drained marinated beef. In a large skillet over medium-high heat, heat 2 tablespoons oil. Add steak in a single layer, working in batches if needed, and cook until seared, 1 to 2 minute per side. Remove steak and set aside.
- Return skillet to medium heat. Heat remaining 1 tablespoon oil, then add chili, 1 tablespoon sesame seeds, garlic, green onion, and a pinch salt. Stir and cook until fragrant, 2 minutes. Add in broccoli and cook, stirring occasionally, until bright green, about 4 minutes. Add in broth and let cook, stirring occasionally, until broccoli is tender, 3 to 4 minutes more.
- Add hoisin and 1/3 cup reserved marinade and stir to evenly distribute. Bring to a simmer. Add back cooked steak and toss until evenly coated. Let cook, stirring, until sauce thickens.
- Garnish with more sesame seeds and green onions before serving.

- 12 oz. wide rice noodles or udon noodles

How to cook:
- In a large pot of salted boiling water, cook noodles according to package directions until al dente. Drain, then rinse with cold water.
- In a small bowl, whisk together soy sauce, garlic, lime juice, Sriracha, honey, and 2 tablespoons of sesame oil, then whisk in cornstarch until smooth.
- In a large skillet over medium-high heat, heat remaining 1 tablespoon sesame oil. Add steak and sear 3 to 5 minutes per side.
- Stir in broccoli, mushrooms, and 2 tablespoons water and cook until tender, about 6 minutes more. Add sauce, simmer 3 minutes, then reduce heat to low and add cooked noodles. Toss until fully coated and warmed through.

Ingredients:
- 250 g medium egg noodles
- 2 tbsp. sesame oil
- 2 rump or sirloin steaks, roughly 200g each, fat trimmed and cut into 1cm slices
- 1 1/2 tbsp. cornflour
- 1 red onion, halved and thinly sliced
- 400 g purple sprouting broccoli, cut into thirds widthways
- 100 ml black bean sauce
- 2 tbsp. soy sauce
- 1 1/2 tbsp. rice wine vinegar
- 4 cm piece ginger, peeled and finely grated
- 3 cloves garlic, crushed
- 1 red chilli, finely diced (remove seeds if you want less heat)
- 4 spring onions, trimmed and finely sliced
- Lime wedges, to serve
How to cook:
- Cook the noodles to pack instructions. Drain and run under cold water until cool to prevent them from sticking together. Set aside.
- Toss the steak slices in the cornflour. Heat 1tbsp of the oil in a wok over high heat. Once hot, add the steak and stir fry for 3-4 minutes, until golden brown all over but still slightly pink in the middle. Transfer to a plate and set aside.
- Return the wok to high heat with the remaining oil. Add the onion and broccoli and stir fry for 4-5 minutes, until golden brown. Meanwhile, mix the black bean sauce, soy sauce and vinegar together in a jug with 3tbsp water. Add the ginger, garlic and chilli and stir fry for a further 1 minute. Add the black bean sauce mixture and cook for 1-2 mins until the broccoli is tender and the sauce has thickened. Add a splash more water if needed.
- Return the steak to the wok with the noodles and spring onions. Toss together until everything is piping hot. Divide between 4 plates and serve with lime wedges.

- 1 lb. flank steak, cut into 1/4" strips
- 3 tbsp. cornstarch, divided

How to cook:
- Cook rice according to package instructions. Meanwhile, rinse and dry meat with a paper towel to remove any moisture. In a medium bowl, mix meat with 2 tablespoons cornstarch until well coated.
- In a large pot fitted with a steamer basket, add 1" of water. Bring to a boil and add broccoli, then cover and steam until tender, 4 to 5 minutes.
- In a small jar, combine garlic, ginger, sugar, soy sauce and remaining tablespoon cornstarch, then season with pepper and shake well.
- In a cast iron skillet over medium-high heat, heat peanut oil. When oil is hot and almost smoking add meat in a single layer and cook until browed, 4 to 5 minutes total. (Cook meat in batches to prevent steaming in an overcrowded pan.) Transfer meat to a plate. Shake jar of sauce well and pour into skillet; let simmer, 2 to 3 minutes. Add beef and broccoli back to skillet to warm through, and make sure everything is well coated. Serve over steamed rice and garnish with green onions.
