Ingredients:
  • 4 cups cooked (shredded chicken)
  • 1 1/2 cups chopped celery
  • 1 1/2 cups red grapes (halved)
  • 2 green onions (thinly sliced)
  • 1 cup mayonnaise
  • 1/4 cup sour cream or ranch dressing
  • 2 Tablespoons fresh dill (chopped)
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • juice of 1 small lemon
  • 8 Croissant rolls
How to cook:
  1. Add the cooked shredded chicken, celery, grapes and green onion to a large bowl. Toss to combine. Set bowl aside.
  2. In a small bowl, add the mayonnaise, sour cream, chopped dill, pepper, salt and lemon juice. Whisk together until combined. Pour the dressing over the chicken mixture. Stir until combined.
  3. Cover and refrigerate at least 4 to 6 hours or overnight.
  4. Slice each croissant roll in half. Spread 1/2 cup of chicken salad over bottom half. Top with the other half. Serve and enjoy!

  • 2 packed cups / 250-300g Cooked/Rotisserie Chicken, (diced into small cubes)
  • 4 singles rashers of Bacon, (cooked, cooled & chopped)
  • 1/4 cup / 40g Dried Cranberries, (roughly diced)
  • 1/4 cup / 35g Pecans or Walnuts, (roughly diced)
  • 1/4 cup finely diced Red Onion ((approx 1/2 small onion))

How to cook:
  1. Dressing
  2. In a small mixing bowl combine mayo, yogurt, lemon juice, mustard and a pinch of salt and pepper (to taste).
  3. Salad
  4. In a larger mixing bowl add chicken, celery, cranberries, bacon, red onion and nuts. Pour in the dressing and combine until all the filling is coated in the dressing.
  5. Sandwich
  6. Slice open croissants and add chicken salad. Fold back over then tuck right in!

How to cook:
  1. If the chicken is thick, butterfly it in half.
  2. Preheat a frying pan over medium-high heat. Spray the pan with non-stick spray and cook the chicken 8 - 10 minutes (or until it reaches an internal temperature of 165 degrees) flipping over half way through.
  3. Allow the chicken to cool about 5 minutes on a cutting board.
  4. Dice the chicken into bite sized pieces.
  5. Dice the celery into small pieces and cut the grapes in half.
  6. In a medium bowl mix the chicken, celery, red grapes, almonds, mayonnaise, salt, and black pepper until combined.
  7. For the best flavor, chill for 1 hour in the refrigerator then serve on large buttery croissants.
