- Preheat oven to 425°F. Line 12 muffin cups with liners or lightly spray with nonstick spray.
- Make the topping
- In a medium bowl, whisk together topping ingredients: flour, brown sugar, cinnamon, and salt. Cut in the butter until completely incorporated. Mixture should be crumbly and hold together when squeezed between your fingers. Keep in refrigerator until ready to use.
- Make the muffins
- In a medium mixing bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- In a large mixing bowl, cream butter and sugar. Beat in eggs one at a time. Use a wooden spoon to stir in milk and vanilla.
- Add dry ingredients and using a wooden spoon stir just until combined. If you still see small streaks of flour that's okay.
- Scoop batter into prepared muffin tin. Cups should be full. Sprinkle generously with streusel topping, pressing down firmly on the tops to ensure that it sticks.
- Bake muffins at 425 F for 5 minutes. Then reduce the temperature to 350 F and bake another for 15-18 minutes, or until a toothpick inserted in the center comes out clean. Hitting the muffins with a few minutes of high heat helps create a large muffin dome.
- Cool for 5 minutes in pan, then remove to wire rack to cool completely.

- Grease only the bottoms of a 12-cup muffin tin.
- In a medium mixing bowl, combine the ingredients for the streusel, the light brown sugar, flour and cinnamon. With a pastry cutter, cut butter in until it looks like coarse meal. Set aside.
- In a small bowl, whisk together the ingredients for the batter – the flour, baking powder, baking soda, and salt.
- In the bowl of an electric mixer fitted with the paddle attachment, combine the butter and sugar. Beat until light and fluffy.
- Add the eggs, buttermilk, and vanilla extract.
- Mix in the dry ingredients and stir until just combined.
- Sprinkle the streusel on top of the batter and then use a rubber spatula to gently fold it or poke it in a few times.
- Evenly divide the batter between the muffin cups.
- Bake for 13 minutes or until a toothpick inserted in the middle comes out clean.
- Transfer muffin tin to a wire rack and allow to cool for 5 to 10 minutes before removing from the pan.

- Streusel Topping
- Prepare the streusel topping. Melt butter and let it cool down.
- Mix the oats, flour, sugar and cinnamon in a bowl. Add the melted butter and mix to form a crumbled mix. Set aside.
- Filling
- In a small bowl, mix the sugar and cinnamon powder for the filling and set aside.
- Muffins Batter
- To make the muffins batter, sieve flour, baking powder and salt into a large bowl. Add brown sugar and mix with a whisk until the sugar is well incorporated into the flour. Keep aside.
- In a separate measuring jug, meausre the oil and milk. Add the egg and beat lightly to incorporate it into the oil and milk. Pour the liquid ingredients into dry ingredients and mix briefly until the flour mixture is all moistened.
- Scoop the muffins batter into prepared muffin cups until about half full. Spoon half teaspoon of cinnamon filling and top with muffin batter until about ⅔ full. Use a skewer to swirl the batter.
- Sprinkle the prepared streusel topping until full.
- Bake the muffins for 13 minutes. Increase the baking time if using larger muffin casings.
- Remove muffins from oven and let cool to room temperature on a wire rack.

- Place rack in center of the oven then preheat to 375 degrees. Coat a standard-size muffin tin with cooking spray then set aside.
- Whisk together flour, sugar, baking powder, baking soda and salt in a medium bowl then set aside.
- In a separate, smaller mixing bowl, whisk together egg, milk, vanilla and melted butter. Add wet ingredients to the bowl containing the dry ingredients then mix until just combined.
- Mix streusel ingredients in a small bowl using a fork to mash the brown sugar, flour and cinnamon together with the butter until combined but still crumbly.
- Add ½ tsp of the streusel mixture to the bottom of each muffin cup. Pour enough muffin batter over the streusel to fill each cup a little less than half full. Add an additional ½ tsp streusel mixture over the batter then finish by filling each cup with remaining muffin batter.
- Use a toothpick or butter knife to lightly swirl the batter and distribute the streusel through the center of the muffin. Sprinkle all remaining streusel over the top of the muffins.
- Bake 18–20 minutes or until a toothpick in the center comes out clean. Cool muffins for 5 minutes then remove from pan and transfer to a wire rack to cool completely.
