- 1 pound 8 ounces salmon ((if buying frozen, thaw for 8 hours in the refrigerator))
- 1/4 cup unsalted butter (melted)
- 1/4 cup fresh flat leaf parsley (minced)
- 2 tablespoons lemon juice
- 1/2 tablespoon kosher salt
- 1/2 teaspoon black pepper
How to cook:
- Preheat your oven to 350 degrees.
- Place heavy duty aluminum foil on a baking sheet.
- Place the thawed salmon on the foil.
- In a bowl mix together the melted butter, 2 tablespoons parsley, lemon juice, salt, and pepper. Pour over the salmon.
- Fold the foil in on itself to create a pouch around the salmon, rolling up the ends so that it is completely sealed.
- Bake for 14 to 16 minutes or until the salmon registers 125 degrees with an instant read thermometer (for medium rare).
- Open up the foil, garnish with the remaining parsley, cut and serve.

- Position a rack in the middle of the oven and preheat the oven to 375°F (190°C)
- Line a sheet pan with a large piece of aluminum foil.

- In a small microwave-safe bowl, microwave the butter, garlic, and herbs until the butter is melted and the garlic fragrant, about 30 seconds. (This can also be done on the stove-top)
- Tear off 8 sheets of foil about 12 -14 inches long. Double up the foil by stacking two pieces on top of each other so you are working with 4 sets of foil – 2 pieces each. Brush a bit of the butter mixture in the center of each set of foil and place two slices of lemon on top of the butter.
- Evenly distribute the salmon fillets, broccoli, and cauliflower between each of the foil packets. Brush the additional butter over the vegetables and fish. Add salt and pepper to taste.
- Draw two opposite ends of the foil up and fold it over and then fold each end (you want to seal the food inside, making a packet).
- Place foil packets on a baking sheet and bake in a 400 degree oven for 10-12 minutes until the fish is cooked through. Remove from the oven when fish is cooked through.
- Carefully open the foil packets and enjoy while still hot. Serve with additional lemon slices.

- Preheat oven to 375°F. Prepare a large piece of aluminum foil on a rimmed baking sheet.
- In a small bowl, mash together the butter, garlic, parsley, mustard, salt, pepper, lemon juice and zest.
- Slather, best you can, all over salmon. Don't worry about it being even, after it melts it will evenly distribute.
- Wrap salmon tightly and bake for 15-20 minutes. This depends greatly on the thickness of your salmon.
- Remove salmon and pull back aluminum foil. Allow to rest for 3-4 minutes before serving.
