Ingredients:
- 8 ounces (250 grams) small pasta shapes
- 1 pound (450 grams) ground beef
- 1 cup onion (chopped) (approx 1 large onion)
- 1 cup white mushrooms (chopped)
- 1 cup tomatoes (chopped) (approx 4 medium tomatoes)
- 4 ounces (125 grams) grated cheddar cheese (approx 1 cup)
- 1 small can corn kernels (drained) (198 grams (7ounces))
- 1 tablespoon paprika
- 1 teaspoon sugar
- 1 tablespoon mixed herbs / Italian herbs
- 1 teaspoon salt (or to taste)
- ½ teaspoon ground black pepper
- 1 teaspoon crushed garlic (approx 2 cloves)
- ½ teaspoon finely grated ginger (1" piece)
- 2 tablespoons Worcestershire sauce
- 2 tablespoons tomato paste or tomato puree (not ketchup)
- 2 beef stock cubes (dissolved in 2 cups of boiling water)
- 2 tablespoons sunflower or canola oil (for frying)

- Peel the onions. Wipe the mushrooms with a damp cloth. Wash the tomatoes. Cut them all into approximately 1cm dice.
- Heat the sunflower oil in a large frying pan or saucepan and add the ground beef, spices, ginger and garlic. Stir well over a medium heat and break the meat up with a spatula to ensure that it browns all over and turns crumbly. Tip away any excess fat that may have cooked out.
- Add the onions and let them soften. I find the fastest way to soften the onions is to cover the pan with a lid and let them sweat for about 5 minutes in a low heat.
- Now add the mushrooms and tomatoes and let them cook for about 3 minutes until the tomatoes start to break down.
- Dissolve the stock cubes in 2 cups of boiling water and stir in the tomato paste and worcestershire sauce. Pour the stock into the pan, cover with a lid and bring to the boil. Turn the heat down to a simmer and leave for 10 minutes.
- Then tip in the pasta, and an extra cup of water, cover and leave to simmer for about 12 minutes until the pasta is cooked and the liquid has been mostly absorbed.
- Finally, stir in the cheese and corn, stir well to mix, and leave on the low heat until the cheese has melted.
- Spoon into serving dishes and serve. If you want to turn this into a more substantial meal, serve with a fresh green salad and slices of garlic bread.

- 1/2 cup chopped onion
- 1/2 cup chopped red or orange bell pepper
- 2 teaspoons minced garlic
- 2 teaspoons seasoned salt (, such as Lawry’s)

- In a large pot, add beef, onion and peppers. Cook over medium heat for 3 to 5 minutes, or until brown. Drain any grease if needed. Stir in the garlic, Italian seasoning, seasoned salt and Worcestershire sauce. Allow to cook for an additional 1 to 2 minutes.
- Stir in diced tomatoes, tomato sauce, sweet corn and chicken broth. Bring to a light simmer and then add in noodles. Stir, and then cover with a lid. Allow to cook for 10 minutes, or until the noodles are tender. Stir halfway to prevent noodles from sticking.
- Taste and add salt and pepper. Sprinkle cheese over top if desired and cover with the lid for one minute, or until the cheese has melted. Add fresh basil if desired. Serve while hot!

- 1 medium sized red onion (diced)
- 1 tbsp minced garlic
- 1/2 cup frozen corn

How to cook:
- Brown the ground beef over medium heat, and drain.
- Sprinkle in the seasonings at this time, then toss in the onions, corn, and peas & carrots.
- Give everything a nice stir, then add in the tomato paste, worcestershire sauce, and tomatoes.
- Pour in the chicken broth, add in the bay leaves ,then stir.
- Add in the elbow macaroni, and stir.
- Reduce the heat from medium to low.
- Stir, then cover the pot.
- Let simmer until the pasta is tender.
- Stir the ingredients, top off with 1 cup shredded sharp cheddar.
- Place the lid back onto the pot, and turn the heat off.
- Let sit for 10 minutes.
- Serve and enjoy!

Ingredients:
- 2 lbs ground beef
- 1 lg onion, (chopped)
- 3 cloves garlic, (minced)
- 10.5 oz cream of mushroom soup
- 15 oz can tomato sauce
- 6 oz can tomato paste
- 1 cup beef broth
- 10.5 oz can Rotel
- 1 tsp red crushed peppers
- 1 tsp ground cumin
- 1 tsp oregano
- 1 tsp basil
- 1 tsp pepper
- 2 cups frozen corn
- 2 cups sharp cheddar cheese, (grated)
- 1/2 cup Monterey Jack cheese, (grated)
- 8 oz elbow macaroni, (use 1/2 of 16 oz box)
How to cook:
- In a large sauce pan or dutch oven, brown ground beef, onions and garlic. Drain and return to pan.
- Over medium heat, add red crushed peppers, cumin, pepper, oregano and basil. Stir.
- Pour tomato sauce, tomato paste, soup, beef broth and Rotel into ground beef mixture.
- Cook for approximately 20 minutes then add frozen corn and continue cooking for an additional 10 minutes.
- Add grated cheese, stir until melted.
- Cook pasta according to package directions, drain and rinse with warm water.
- Spoon pasta into ground beef mixture, then enjoy!
