Ingredients:
  • 2-8 ounces chocolate, (melted (and tempered if needed))
  • optional mix-ins or toppings like toffee bits, cookie pieces, nuts, dried fruits, caramel bits, and more

How to cook:
  1. Pour your melted and tempered pure chocolate or melted compound chocolate (candy melts, melting wafers, confectionery coating, and almond bark) into a candy bar mold, non-stick loaf pan, or rectangle plastic container.
  2. If desired, you can stir your favorite candy bar toppings into the melted chocolate before pouring it into the mold or you can add the ingredients on top of the wet chocolate.
  3. Tap the mold a few times to allow any trapped air bubbles to come to the surface of the chocolate.
  4. Pop the air bubbles using a toothpick or knife.
  5. Then tap the mold a few more times to smooth out the top surface of the chocolate.
  6. Chill pure chocolate candy bars in the refrigerator or compound chocolate (candy melts, etc.) in the freezer for about 10 minutes just until the chocolate hardens.
  7. Remove and un-mold the candy bars.

  • 6 sheets graham crackers
  • 1/2 cup peanut butter (you can mix with Nutella if you like)
  • 12 oz Ghirardelli dipping chocolate or almond bark

How to cook:
  1. Cut graham crackers into individual pieces using a sharp knife. You can break them with your fingers, but sometimes they don't break evenly. Your best bet is to use a knife.
  2. Spread one cracker with peanut butter, then place another graham cracker on top of it. Smooth the sides where peanut butter may have seeped out. Use extra peanut butter to make them even all the way around the cracker sandwich.
  3. Use appetizer tongs to dip in melted chocolate. Shake off the excess and place on a lined with wax paper cookie sheet and allow chocolate to set.

How to cook:
  1. Place the molds on a flat surface and add what you would like to them. My favorite combos were:
  2. Cookies and Cream: 1 to 2 crushed Oreo cookies in white chocolate
  3. Homemade Symphony Bar: scant 1/4 cup of both slivered almonds and toffee bits in milk chocolate
  4. Rocky Road: scant 1/4 cup of both mini marshmallows and dry roasted peanuts in dark chocolate
  5. Dark Mr. Goodbar: 1/4 cup dry roasted peanuts in extra dark chocolate
  6. You really could add just about anything!
  7. Melt the chocolate according the directions that come with the package (they are great and really detailed!). Carefully drizzle a small amount of chocolate over the goodies in the mold. You'll add 1/4 to 1/3 cup of chocolate per mold. Gently pick up the mold holding onto the edge and raise it off the surface you are working on 3 to 4 inches. Drop the mold so that it kind of smacks down on to the table. This helps the melted chocolate to settle into the cracks and it also gets air bubbles out. Continue to carefully drop the mold 4 or 5 times until things look settled. If you need to add a bit more chocolate do it now. Drop it another time or two to smooth out any chocolate you might have added.
  8. Repeat until you make as many chocolate bars as you'd like.
  9. Let the homemade candy bars rest at room temperature until completely set. This may take a few hours depending on the temperature in your house.
  10. Once the chocolate has set gently remove the mold and place the candy bar in the cellophane bag that came with the mold. Store according to the package directions for storing the Chocoley chocolate (in a cool place away from strong odors).
