Ingredients:
  • 1 lb ground beef
  • 1 (16 oz) can refried beans
  • 1 packet taco seasoning
  • 1/2 cup water
  • 6 8-inch flour tortillas
  • 2 cups Mexican cheese, grated
  • For topping:
  • Sour cream
  • Black olives
  • Iceberg lettuce, chopped
  • Tomatoes, chopped
How to cook:
  1. Preheat oven to 350°F and spray an 8-inch springform pan with nonstick spray.
  2. In a large skillet, brown the ground beef and drain, if needed. Add in the refried beans, taco seasoning, and water, and simmer until most liquid has absorbed, about 5 minutes.
  3. Line the bottom of the prepared pan with a tortilla. Spread 1/5 of the beef mixture evenly over the tortilla and top with 1/4 cup of the cheese. Repeat layers - tortilla, beef, cheese - ending with a tortilla on top.
  4. Sprinkle remaining cheese over the top and bake until cheese is melted and golden brown, about 20 minutes.
  5. Let cool 5 minutes before slicing and serving. Serve with toppings if desired. Enjoy!

How to cook:
  1. PLACE meat in microwaveable (plastic) colander set over bowl. Microwave on HIGH 8 minutes, stirring and breaking up every 2 minutes.
  2. Discard any fat that collects in bowl. Transfer crumbled meat to 9-inch microwaveable pie dish.
  3. Stir in seasoning mix and water. Microwave 5 min., stirring after 3 minute.
  4. REMOVE half of the meat mixture; set aside. Place eight tortilla quarters on top of remaining meat mixture in pie plate.
  5. Top with reserved meat mixture and remaining eight tortilla quarters. Top with salsa and cheese.
  6. MICROWAVE 4 minutes. Top with lettuce, green onions and sour cream just before serving.

  • cherry tomatoes
  • avocado slices
  • lettuce
  • sour cream
  • pico
  • cilantro
  • jalapeños
  • onions
  • 8-10 tortillas
  • 1lb of ground beef or ground turkey
  • 1 can of refried beans
  • 2 cups of shredded cheese
  • taco seasoning
How to cook:
  1. STEP ONE: Preheat oven to 400 degrees and line a cookie sheet with foil. Alternatively, you can use a greased glass baking dish.
  2. STEP TWO: Brown and season (with taco seasoning) your ground beef or turkey.
  3. STEP THREE: Spread a layer of refried beans on top of a tortilla, then spread a layer of ground meat, then sprinkle cheese on top of that. Repeat this process until you run out of meat. I typically only make my stack 3-4 layers because the ingredients begin to fall off. If I still have more meat left at this point, I make a second taco bake.
  4. STEP FOUR: Bake for 6 minutes or until the edges of the tortillas begin to brown.
  5. STEP FIVE: Add your toppings, slice into pie-shaped pieces, and enjoy!

How to cook:
  1. Preheat oven to 375°F. Spray a 9" pie plate with cooking spray.
  2. Heat a skillet over mid-high heat and brown 1/2 pound ground chuck. Season beef with 1/2 tablespoon chili powder, 1 teaspoon ground cumin, 1/2 teaspoon paprika, 1/2 teaspoon kosher salt, & 1/2 teaspoon freshly ground black pepper. Add 1/2 cup diced onions and 1/2 tablespoon freshly minced garlic. Cook until the meat is browned all the way through and the fat is absorbed.
  3. Place one 10" tortilla in the pie plate allowing the tortilla to cover the bottom of the pie plate and go up the sides. Top with 8 ounces refried beans. Spread to cover the tortilla evenly across the bottom of the pie plate.
  4. Spoon the meat mixture over the beans and spread evenly. Place the 2nd tortilla on top of the meat mixture and press down around the sides gently. Bake in the preheated oven for about 10-15 minutes until lightly browned.
  5. Remove from the oven and spread 1/2 cup salsa over the top of the tortilla. Sprinkle with 1 cup shredded cheese and spread the diced tomatoes over top of the cheese evenly. Top with 1/4 cup chopped green onions and 2 tablespoons finely diced jalapeno peppers. Bake for another 5 minutes or until the cheese is melted to your liking.
  6. Remove from the oven and allow to cool. Garnish with freshly chopped cilantro and serve with sour cream and Simple Guacamole. Enjoy!
