Ingredients:
  • 12 ounces (approximately 3 cups) shredded smoked cheddar*
  • 4 ounces cream cheese
  • 3 cloves garlic
  • 1 teaspoon worcestershire sauce
  • 1/4 teaspoon liquid smoke, optional
  • 1/2 teaspoon smoked paprika
  • 1/2 cup apple cider or juice
How to cook:
  1. Pulse the cheese, cream cheese, and garlic together in a food processor until mixture is crumbly.
  2. Add the worcestershire, liquid smoke, and paprika and pulse briefly to combine.
  3. Add half of the cider and process until mixture is completely smooth. Add remaining cider as neeeded to reach desired consistency.
  4. If chilling to serve later keep in mind it will firm up more after being chilled so I add the entire amount apple cider.
  5. Store in an airtight container in the fridge for up to 2 weeks.
  6. *Medium or sharp cheddar also works well. If you don't have smoked cheddar but want a more smoky flavor double the liquid smoke.

Ingredients:
  • 1 cup sharp cheddar cheese, grated
  • 1/2 cup cream cheese, softened
  • 1/2 cup beer, see notes for alternatives
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon cayenne pepper
  • 1 Tablespoon prepared horseradish
  • 1 Tablespoon parsley, minced
  • 1 teaspoon fine sea salt
How to cook:
  1. Place all ingredients into a food processor and pulse until blended. Mixture may have some small lumps.
  2. Refrigerate for 20-30 minutes before serving.
  3. Note: light beers may be great for sipping, but this recipe needs something with more body. You may substitute water for an alcohol-free version, but it will thin out the flavor, so you may want to increase the horseradish.

  • 1/2 cup beer (, optional)
  • 1/2 teaspoon dry mustard

  • 1-3 tablespoon(s) prepared horseradish* (, drained and dry )
  • 1 tablespoon fresh parsley (, minced)
  • 1 teaspoon fine sea salt
