- Place bacon drippings or butter in a Dutch oven or other lidded casserole dishes. Add onions and sauté until translucent.
- Add chopped apples and continue to sauté until they caramelize slightly. Add sauerkraut, water, brown sugar, mustard, and caraway seeds, and mix well. Bring to a boil. Reduce heat.
- If cooking on the stovetop, cover, and simmer for 50 minutes, stirring occasionally and adding water if necessary.
- If baking, heat oven to 325 F. Cover and bake for 50 minutes, stirring occasionally and adding water if necessary.
- Whether cooking on the stovetop or in the oven, now is the time to add the applesauce, mixing well.
- Cover and continue to cook for another 10 minutes. Season to taste with salt and pepper.
- If using a slow cooker, combine the sautéed onions and apples, sauerkraut, water, brown sugar, mustard, caraway seeds, and applesauce in the crock and cook on high for 2 hours or on low for 4 hours. Season to taste with salt and pepper.
- Serve hot as a side dish with pork, sausage, beef, or poultry.

- 1 large onion, thinly sliced
- 2 tablespoons unsalted butter
- 4 pounds sauerkraut, rinsed and drained
- 2 Gala, Fuji, or Red Delicious apples, thinly sliced
- 1 cup dry white wine
- 1 to 2 tablespoons packed dark brown sugar
How to cook:
- Cook onion in butter in a 4-to 5-quart heavy pot over medium-high heat, stirring occasionally, until golden, about 6 minutes. Stir in sauerkraut, apples, and wine and bring to a simmer.
- Cover pot and reduce heat, then simmer, stirring occasionally, until sauerkraut is very tender, about 2 hours.
- Stir in 1 tablespoon brown sugar and 1/2 teaspoon each of salt and pepper. Add more brown sugar, salt, and pepper to taste.

- Layer the sauerkraut and apples in a large saucepan.
- Add water to the pan just to the top of the sauerkraut and apples.
- Place over medium high heat. Bring to a boil.
- Add the caraway seeds.
- Cover the pan and reduce heat to low-medium. Cook until the apples are soft, approximately 20-25 minutes.
- Remove cover, stir well. Increase heat to high and cook until the water is almost completely evaporated. Keep a close watch and stir to avoid scorching.
- Stir the butter into the cabbage mixture and let it melt. Remove from heat when all of the water has evaporated. Add salt and pepper, to taste.
- Serve hot.
