  • 2 tablespoons Brown beef gravy powder, used as the thickening agent
  • 2 teaspoons brown suger
  • 1 brown onion
  • 2 tablespoons malt vinegar
  • pinch salt
  • pinch pepper
  • slices apple, optional
  • heaped tablespoon sultanas, optional
  • 20 gram oil
  • 1 can coconut cream
  • 2 teaspoons Red or Green Curry Paste
  • 200 grams water

  • 10 pork sausages
  • 400 g coconut milk (full fat)
  • 1 Tablespoon olive oil
  • 1 medium onion sliced
  • 1 Tablespoon curry powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon cumin seed
  • ½ cup water
  • Chili flake to taste
  • Salt and black pepper to taste
  • Cilantro leaves (to serve and garnish)

How to cook:
  1. Preheat the oven to 200C/400F
  2. Remove the sausages from its packaging and arrange them in a foil-lined rimmed baking sheet in a single layer. Place the baking sheet in the oven and bake the sausages for 20-25 minutes flipping it halfway through.
  3. Remove the sausages from the oven and set them aside (You can slice each sausage into 2 or 3 smaller pieces if you prefer)
  4. Place a skillet over medium high heat, add sliced onions and saute until soft and fragrant.
  5. Add cumin seed, curry powder, and turmeric powder and stir to combine for about 15 seconds just to release the fragrance.
  6. Stir the coconut milk into the sauteed aromatics, add half a cup of water (sub with chicken stock) and stir to combine.
  7. Season with salt, black pepper, and red pepper flakes and stir.
  8. Add the cooked sausages to the coconut curry, reduce the heat and leave to simmer for 5-8 minutes or until the curry thickens slightly. Just before you take the curry off the heat, stir in one cup of frozen peas and simmer for another minute. Remove the pan from the heat and serve as desired.

  • 800 g Chipolata Pork Sausages
  • 2 tbsp Olive Oil
  • 1 Onion (peeled and finely chopped)
  • 2 Garlic Cloves (peeled and finely chopped)
  • 1 tbsp Fresh Ginger (grated)
  • 3 tbsp Mild Curry Powder
  • 2 tbsp Plain Flour
  • 500 ml Chicken Stock

How to cook:
  1. Cook your sausages. You can either fry, oven bake or grill them using 1 tbsp of the olive oil. This should take about 10 minutes and you can do this the night before to save time, and keep them in the fridge.
  2. Heat 1 tbsp of olive oil in a shallow casserole and fry the onion, garlic and ginger on a medium heat until the onion softens (about 4-5 minutes).
  3. Stir in the curry powder and flour and give it a good mix.
  4. Pour in the chicken stock and simmer for 5 minutes on a medium heat. The sauce will start to thicken.
  5. Add the frozen peas and cook for a further 5 minutes.
  6. Add the double cream and mango chutney and mix to combine.
  7. Add the cooked sausages to the sauce (I usually cut them in half) and warm through for a few minutes.
  8. Season and serve with rice.
