- 2-1/4 cups sugar, divided
- 2 eggs
- 5 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1-1/2 teaspoons ground cardamom, divided
- 1/2 cup milk

- In a large bowl, cream the butter and 2 cups of the sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking soda, baking powder and 1 teaspoon of the cardamom; add to creamed mixture alternately with milk. In a small bowl, combine the remaining sugar and cardamom; dip rounded teaspoonfuls of dough into sugar mixture. Place on greased baking sheets. Bake at 375° for 10-12 minutes or until lightly browned. Cool on wire racks.

Ingredients:
- 2 eggs
- 2/3 cup butter or margarine, softened
- 1 cup sugar
- 1/4 cup milk
- 1 tsp baking soda
- 1 tsp vanilla
- 1/2 tsp lemon extract
- 1/4 tsp salt
- 3-4 cups flour
- Powdered Sugar Frosting (click over for the recipe)
How to cook:
- Cream together the butter and sugar until well combined. Beat eggs into the mixture.
- Add milk, baking soda, vanilla, lemon extract, and salt. Blend until well combined.
- Add 3 cups of flour, mixing in one cup at a time until blended.
- Slowly add one additional cup of flour, only if needed.. You'll want your dough to be slightly sticky but form a solid dough.
- Transfer dough to the fridge and allow to chill for an hour and a half or overnight.
- Lightly flour your surface and roll out the dough to 1/8" thick (not too thick, not too thin).
- Cut our shapes with cookie cutters and placed cut dough onto a baking sheet.
- Bake 8-10 minutes at 350*F. Watch for the cookies to just start to turn golden. If you cook them too long, they will not be soft.

- 2 ¾ cup all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 cup unsalted butter (softened)
- 1 ½ cups granulated sugar
- 1 large egg
- 3 tablespoons whole milk
- 1 teaspoon pure vanilla extract
- ⅓ cup decorators sugar (optional)
How to cook:
- In a medium sized mixing bowl, combine the flour, baking soda, baking powder, and salt with a whisk, then set aside.
- In a large mixing bowl, add softened butter and granulated sugar. Cream them together with an electric mixer until light and fluffy. Add in the egg, and mix until combined. Then add in the vanilla and milk, mixing until everything is well combined.
- Add the dry ingredients into the wet ingredients gradually, mixing well between each addition. Scrape down the sides of the mixing bowl when needed.
- Use a cookie scoop to scoop 1 ½ tablespoon portions of dough onto a parchment lined baking sheet. They can be close together, but not touching. Cover the tray with plastic wrap and chill for at least two hours, and up to overnight.
- Line two sheet trays with a Silpat or parchment paper and preheat the oven to 375°F/190°C. Pour the decorator’s sugar into a small bowl, and remove the dough from the fridge.
- Roll each cookie ball between your palms to form a smooth ball. Dip the tops of the balls into the decorator’s sugar, and place them sugar side up on prepared cookie sheets. Keep them 2 inches apart to allow for spreading.
- Bake for 8-11 minutes until lightly golden brown around the edges. Let the cookies cool on the tray for 10 minutes, then transfer to a wire cooling rack.
