Easy to make crescent roll breakfast casserole with eggs, bacon and cheese. With a simple crescent roll crust, you can customized the fillings to include breakfast meats, sautéed veggies and you favorite cheese.

Ingredients:
  • 1 tube refrigerated crescent rolls
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 cups spinach
  • A dash of red pepper flake
  • 1 pound pork breakfast sausage, cooked
  • 6 eggs
  • ½ cup milk
  • ½ teaspoon pepper
  • 2 cups cheddar cheese, shredded
How to cook:
  1. Preheat oven to 350 degrees.
  2. Press unrolled crescent roll dough into the base of a greased 9x13 baking pan.
  3. Saute onion in olive oil in a large skillet over medium heat for 5-7 minutes, until tender. Add garlic and cook for 1 minute. Add spinach and stir. Once spinach is wilted, remove from heat. Season with red pepper flake.
  4. In a bowl, combine spinach mixture with browned sausage. Spread on top of crescent roll crust in pan.
  5. In a separate bowl, whisk together eggs, milk, pepper and cheddar cheese. Pour into baking dish. Gently stir ingredients on top of crust.
  6. Bake for 35-40 minutes.

  • 1 tube crescent rolls
  • 75 g/ 2.6 oz lean bacon cubes (See note)
  • 1 teaspoon olive oil (only needed if the bacon is completely lean)
  • 3-4 green onions (depending on size)
  • ½ bell pepper
  • 6 large eggs
  • 200 ml/ 6.7 fl.oz/ scant 1 cup milk
  • fine sea salt and black pepper
  • 150 g/ 5.3 oz/ 1 ½ cups shredded cheese

How to cook:
  1. Preheat the oven to 190 degrees Celsius/ 375 degrees Fahrenheit. Lightly grease a casserole dish of about 25x20 cm/ 10x8 inches.
  2. Heat a nonstick skillet over medium heat. Add oil only if the bacon is very lean. Cook the bacon until slightly crispy. Drain and let cool slightly. Chop into small pieces.
  3. Open the tube of crescent rolls and roll according to package instructions. Place the rolls in the baking dish.
  4. Add the bacon and the finely chopped green onions and bell pepper.
  5. Whisk together the eggs and the milk. Season well with salt and pepper. Pour over the crescent rolls. Sprinkle with the grated cheese.
  6. Bake for about 40 minutes until the casserole is golden and the egg mixture is set. Let rest for 5-10 minutes before serving.
