Creamy Filipino Leche Flan for Your Next Party
Filipino leche flan is easily a party, potluck, and family gathering favorite! This recipe is so rich and creamy with only 5 key ingredients! Includes the traditional technique to making leche flan with modern tips to make your life easier!

Ingredients:
  • 12 egg yolks
  • 12 ounces evaporated milk (whole or low-fat)
  • 14 ounces sweetened condensed milk
  • 1 teaspoon vanilla
  • ½ cup brown sugar
  • 3 tablespoons water
How to cook:
  1. Boil
  2. In a large stock pot, boil water and place the steamer on top of the water.
  3. Whisk
  4. In a small bowl, whisk the egg yolks, evaporated milk, and sweetened condensed milk until just combined and smooth. Add the vanilla and mix well.
  5. Heat
  6. Put the llanera over the stove on low heat. Add the brown sugar and water to the llanera and mix until combined. Heat over the stove until the sugar mixture has a liquid syrup texture. Please handle carefully as the llanera will get hot.
  7. Strain
  8. Remove the llanera from the stove. Rotate the llanera so that the sugar mixture evenly coats the bottom. Strain the egg mix through a mesh strainer over the llanera. The egg mix will be strained directly on top of the sugar mixture in the llanera. Please note this mixture will yield extra. The llanera will only need to be filled about ¾ of the pan. (The extra will be just enough for a small ramekin that can be cooked separately. Start to check for readiness at the 30 minute mark due to its size.)
  9. Steam
  10. Cover the llanera with aluminum foil. Put in the steamer over boiling water and steam for 60-65 minutes until a knife inserted halfway through pulls away clean.
  11. Cool
  12. Remove the llanera from the steamer and let it cool for at least 40 minutes. Before serving on a plate, run a thin knife along the edges to loosen the flan. Serve room temperature or refrigerated. Enjoy!

  • 1 cup granulated sugar
  • 1/4 cup cold water
  • 8 egg yolks
  • 300 mL can sweetened condensed milk
  • 354 mL can evaporated milk
  • 1 tsp vanilla

How to cook:
  1. 1. Preheat oven to 350F. Place an 8-in. round baking dish in a large roasting pan. Boil a kettle of water.
  2. 2. Stir sugar with cold water in a medium saucepan over medium-high. Cover and bring to a boil, without stirring, 3 to 5 min. Remove lid and let mixture boil until it turns amber, 5 to 7 min.
  3. 3. Immediately pour hot caramel into the bottom of the baking dish. Quickly swirl to coat bottom evenly. Set aside to let caramel harden.
  4. 4. Beat egg yolks, using a fork, in a medium bowl. (Avoid beating too hard and creating frothy bubbles.) Gradually beat in sweetened condensed milk. Stir in evaporated milk and vanilla. Strain mixture through a fine-mesh sieve over caramel in baking pan.
  5. 5. Pour hot water from the kettle into the roasting pan until it comes one-third up the sides of the dish (be careful not to splash water into the custard). Bake until the edge is set but the centre jiggles slightly when gently shaken, 30 to 35 min. Transfer baking dish to a wire rack to cool completely, preferably overnight.
  6. 6. To serve, run a paring knife around the edge of baking dish to loosen the custard. Set bottom of dish in warm water for 1 min to loosen caramel. Hold an inverted serving plate over dish, then quickly flip plate and dish together to release an onto plate.

  • 12 egg yolks (beaten)
  • 1 can (354 mL) evaporated milk (or whole milk)
  • 1 can (410 mL) condensed milk
  • ½ cup sugar
  • ¼ tsp vanilla extract
  • water, for steaming
  • 3 tbsp water
  • 1 cup light brown sugar
How to cook:
  1. Prepare individual llanera (or two 9 x 2 in. / 23 x 5 cm. flan molds); set aside.
  2. Prepare the Caramel: In a saucepan, bring the water to a boil; reduce the heat to low before adding the sugar. Stir continuously for about 2 minutes or until the sugar caramelizes or turns amber. Immediately pour the caramelized sugar into prepared individual flan molds. Swirl the flan molds to evenly spread the caramel. Set the molds aside.
  3. Prepare the steamer. Place a steamer in a large saucepan or a wok. Pour in water to just below the steamer; bring to boil.
  4. In a bowl, combine evaporated milk, condensed milk, sugar, and vanilla. Gently pass the beaten eggs through a strainer into the bowl. Stir to combine and mix thoroughly. Pour the mixture into the prepared flan molds containing the caramel.
  5. Cover the molds with aluminum foil, arrange into the steamer (water should already boiling before placing the molds inside); steam for 30 minutes or until firm. Set aside to cool and then refrigerate for at least 2 hours.
  6. To serve: Run a knife along the edges of the flan molds to loosen. For individual flans, turn the molds over onto a platter or individual plates. For larger flans, place a platter on top of the mold; holding the platter tightly to the mold, quickly turn upside down.
  7. The flan should come out easily with the caramel on top.
  8. Serve.
