How to cook:
  1. Grease an 8" pan with cooking spray and line it with parchment. Use binder clips to secure the paper to the pan.
  2. Chop Reese's peanut butter cups in half or fourths and place into a large bowl with Rice Krispies Cereal.
  3. In a medium saucepan melt the butter and marshmallows. Cook over medium heat, until it’s all completely melted, stirring frequently so they don't stick.
  4. Pour the butter mixture into the large bowl, over the Rice Krispies Cereal and Reese's Peanut Butter Cups. Add the peanut butter to the bowl and stir the mixture until it's evenly distributed.
  5. Add marshmallow fluff and stir until it's somewhat distributed. You don't want to completely mix it in until you can't tell it's there so just mix it until it's *almost* evenly distributed.
  6. Place in the prepared pan and allow to set. Refrigerating for a few minutes will make them easier to slice.

You can also spray your hands with a little nonstick spray and use your palms to press it down, or place another piece of parchment paper on top before using your hands to press it down.

Rice Krispie treats with marshmallow fluff

A fun treat perfect for the Christmas season!
Provided by: Annika
Total time: 22 minutes
Cook time: 7 minutes
Prep time: 15 minutes
Yields: 50 servings
Cuisine: Canadian,Mexican,vegan
Number of ingredients: 5
Ingredients:
  • 150 gr brown rice Krispies
  • 125 gr vegan butter
  • 370 gr vegan marshmallows
  • 90 gr dark chocolate ((70% cacao and more is vegan))
  • 3/4 cup crushed candy cane (optional)
How to cook:
  1. Put a large pot on the stove over low heat and add the butter. 1-2 minutes.
  2. When the butter is melted, add the chocolate. Stir to mix in. 2-3 minutes.
  3. When the chocolate is melted, add the marshmallows. Keep stirring the mixture to prevent the marshmallow from sticking to the bottom and burning. Continue to cook until the marshmallows are melted. 3-5 minutes.Vegan marshmallows first seem to "lose" bits, as they melt, and they form a goopy giant blob when they're done. Basically, if you can't make out any individual pieces anymore and they don't seem to further disintegrate, you're good to proceed to the next step.
  4. Turn the heat off and stir the Rice Krispies in. Use a wooden spoon and some elbow grease to make sure the Rice Krispies are fully covered by the chocolate-marshmallow mixture.
  5. Get out a bowl and fill it with cool water to moisten your hands with (or stay close to the tap). As soon as the Rice Krispie mixture has stopped being too hot to touch, start scooping out small amounts and roll them to a ball in the palm of your hand. Don't wait too long - as the mixture cools, it becomes harder to shape. Use a tablespoon amount for about 50 balls, or make about 30 golfball-sized ones.
  6. Set aside on a cutting board or baking tray until fully cooled off. About 10-15 minutes.
