My family likes to eat a variety of egg fried rice, because it is convenient, fast, nutritious and does not require ingredients. Today I made shrimp, bean sprouts and egg fried rice for my family.

Ingredients:
  • 1 serving Cold rice
  • 100g Bean sprouts
  • 2 pcs egg
  • 100g meat
  • Some Corn oil
  • Some Fine salt
  • Some Cooking Wine
  • Some shallot
  • Some celery
How to cook:
  1. Prepare bean sprouts, eggs, diced meat, cold rice, green onions, and celery.
  2. Add oil to the pot, add the diced meat and saute.
  3. Cut the meat aside, and fry the egg mixture until it is formed.
  4. Add cold rice, stir-fry loosely, add fine salt and cooking wine and stir-fry evenly:
  5. Add bean sprouts, celery, chopped green onion, and stir-fry until the ingredients are delicious.

Fried Rice with Peas and Bean Sprouts

Ingredients:
  • 1/4 cup oyster sauce
  • 1 tablespoon soy sauce
  • 3 tablespoons peanut oil (divided)
  • 2 large eggs (beaten lightly)
  • 1 cup frozen peas (preferably baby peas, thawed)
  • 2 medium cloves garlic (minced (about 2 teaspoons))
  • 6 cups cooked white rice (cold, large clumps broken up with fingers)
  • 1 cup bean sprouts
  • 5 medium scallions (sliced thin (about 1/2 cup))
How to cook:
  1. In small bowl combine oyster sauce and soy sauce; set aside.
  2. Heat 12-inch nonstick skillet over medium heat until hot, about 2 minutes; add 1 1/2 teaspoons oil and swirl to coat pan bottom. Add eggs and cook without stirring until they just begin to set, about 20 seconds. Scramble and break into small pieces with wooden spoon; continue to cook, stirring constantly, until eggs are cooked through but not browned, about 1 minute longer. Transfer eggs to small bowl and set aside.
  3. Return skillet to burner, increase heat to high, and heat skillet until hot, about 2 minutes. Add remaining 2 1/2 tablespoons oil and swirl to coat pan bottom. Add peas and cook, stirring constantly, 30 seconds; stir in garlic and cook until fragrant, about 30 seconds. Add rice and oyster sauce mixture; cook, stirring constantly and breaking up rice clumps, until mixture is heated through, about 3 minutes. Add eggs, bean sprouts, and scallions; cook, stirring constantly, until heated through, about 1 minute. Serve immediately.

  • 1 cup sprouted brown rice, cooked 3 cups cooked rice
  • 1 tablespoon soy sauce low-sodium if desired
  • 1 tablespoon Shao Hsing rice wine or dry sherry

How to cook:
  1. Cook the brown rice, and keep warm. It takes about 40 minutes to cook, so while it’s simmering you can prepare your ingredients for the stir-fry.
  2. In a small bowl or measuring cup, combine the soy sauce, rice wine or sherry, and the sesame oil. Combine the salt, pepper and sugar in another small bowl. Have all the ingredients within arm’s length of your pan.
  3. Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water quickly evaporates in the pan. Add 1 tablespoon of the oil to the sides of the pan and tilt the pan to distribute. Add the garlic and ginger, and stir-fry for no more than 10 seconds. Add the red pepper, and stir-fry for one minute, then add the bean sprouts and scallions. Stir-fry for about 30 seconds. Add the salt, pepper and sugar. Toss together, and add the soy sauce mixture. Stir-fry for one to two minutes until the vegetables are crisp-tender. Stir in the cilantro, and serve with the rice.
