I love baked stuffed shrimp, but so many restaurants here prepare their shrimp piled high with Ritz crackers drenched in butter. Sweet crabmeat is mixed with Ritz cracker crumbs, Old Bay, Dijon, Worcestershire sauce, and fresh herbs, then stuffed into butterflied jumbo shrimp.

Crab Meat Stuffed Shrimp

  • 1 1/2 pounds 16-20 Ct Shrimp
  • 1 -2 tablespoons Creole seasoning
  • 4 tablespoons Butter
  • 1/2 cup Yellow Onions (chopped fine)

  • 3 cloves garlic (chopped fine)

  • 1/2 cup Dry White Wine
  • 3 tablespoons mayonaise

  • 1 egg (scrambled)
  • 3 tablespoons Worcestershire Sauce
  • 2 tablespoons hot sauce
  • 3 tablespoons lemon juice

How to cook:
  1. Prep the shrimp by peeling and rinsing each one. You can leave the tail shell on if you want but it's not necessary. Take a paring knife and butterfly the shrimp by slicing 1/2 to 3/4 deep into the shrimp starting at the head end to almost all the way to the tail. Clean out the vein and rinse again. Pat the shrimp dry with paper towels. Place butterflied shrimp in a bowl and mix with 1 to 2 Tbs of creole seasoning. Set aside while you prepare the stuffing.
  2. Finely chop onions, green onions, garlic and celery and set aside.
  3. Place the crab meat into a bowl and measure all the other ingredients into prep bowls and set aside.
  4. Preheat the oven to 375 degrees
  5. To Make the Stuffing
  6. Melt the butter in a sauté pan over medium heat until foaming, then add the yellow onions and celery. Saute until just starting to soften, about 8 minutes.
  7. Add the garlic and green onions, saute until aromatic, about 2 minutes
  8. Add the dry white wine, increase the heat so that it begins a heavy simmer. Continue to simmer until the wine has evaporated, about 5 minutes.
  9. Take the frying pan off the heat and set aside until the onion mixture cools. About 10 minutes,
  10. Place the crab meat in a bowl and gently separate to make sure there are no shell pieces.
  11. Gently mix in the cooled onion mixture with the crab meat. Use your hands or a rubber spatula so you don't break up the crab meat.
  12. Add the mayonnaise, lemon juice, Worcestershire, hot sauce, egg and blend together gently.
  13. Add 1/2 to 3/4 cup of the bread crumbs and gently incorporate with the crab meat until well combined. At this point the stuffing should stick tighter and form into a ball when pressed with your hands. Add a little more breadcrumbs if needed to get the right consistency. You can always add more, but you can't take it out!
  14. Let the stuffing mixture sit for about 15 minutes while the flavors blend together.
  15. Stuffing the Shrimp
  16. Prepare a shallow baking dish with non-stick spray or a light coating of vegetable oil.
  17. Place about 1 C of seasoned breadcrumbs in a shallow pan and set aside.
  18. Take a shrimp in one hand; in the other hand take about 2 Tbs of the stuffing and with your hands mold the stuffing around the shrimp starting in the butterflied split in the back of the shrimp. Use more or less stuffing depending on the size of the shrimp. Form a ball around the shrimp and press together. Roll the stuffed shrimp in the bread crumbs coating thoroughly and place it in the prepared baking dish. This should make about 18 stuffed shrimp.
  19. Place the shrimp in a 375-degree Fahrenheit oven and bake for 20 to 25 minutes until starting to brown.
  20. Remove the baking dish from the oven and set aside for about 5 minutes. Serve with a squeeze of lemon and some Creole Tartar Sauce or the sauce of choosing.

How to cook:
  1. Butterfly and devein the shrimp. Preheat oven to 375 F. Peel the shell off of the shrimp (discard), but leave the tail on. Insert a paring knife about ⅔ of the way down into the shrimp, beginning at the top where the head would be. Run the knife down around the curve of the shrimp until you hit the tail. Open the flesh of the shrimp until it lies flat. At the same time, use a paring knife or a fork to remove and discard the vein. It should just lift away.
  2. Make the filling. Combine crab, 2 Tbsp melted butter, Ritz cracker crumbs, 1 tsp Old Bay, 1 tsp Dijon, ½ tsp Worcestershire, 1 Tbsp chopped parsley, and ¾ tsp Kosher salt in a large mixing bowl, then gently mix until combined.
  3. Stuff the shrimp. Season the cleaned shrimp with ¼ tsp Kosher salt. Place about 1 ½ Tbsp of crab filling on top of each shrimp, so that they are standing upright. Use your hand to gently press the filling into the shrimp so it adheres on top.
  4. Bake the shrimp. Cook in a preheated oven for about 13-15 minutes, depending on the size of the shrimp, or until the crab filling is a light golden brown and the shrimp reach an internal temperature of 145 F. Serve immediately with lemon wedges and additional chopped parsley, if wanted.

I think the crabmeat stuffing adds somethng a bit more special. Prep time includes the stuffing's cooling time.

  • 1 lb fresh lump crabmeat, shells removed (or 2 cans of canned crabmeat if fresh isn't available)
  • 2 teaspoons cajun seasoning or 2 teaspoons Old Bay Seasoning (or to taste) (optional)

  • 3 tablespoons melted butter
  • 1/2 cup onion, minced

How to cook:
  1. Preheat the oven to 375 degrees.
  2. Line your baking dish with foil, and butter or spray with non stick cooking spray.
  3. Place the crabmeat in a large bowl and season with the Cajun Seasoning, Old Bay or salt and pepper, (your choice).
  4. Cover and refrigerate until ready to use.
  5. In your fry pan, melt 4 tablespoons butter over medium-high heat.
  6. Add the onions, celery, and bell peppers and cook, stirring, until softened, about 4 minutes.
  7. Add the parsley and the garlic, and cook, stirring, for 1 minute.
  8. Remove from heat and let cool.
  9. Add the cooled vegetables to the crabmeat and toss to combine.
  10. Add the mayonnaise, egg, lemon juice, Worcestershire and hot sauce and stir gently.
  11. Add 1 cup of cracker crumbs, salt and pepper to taste, and stir gently, being careful not to break up the crabmeat.
  12. Spoon the crabmeat stuffing evenly into each shrimp (about 2 Tbsp), and place, stuffed sides up, in your baking dish.
  13. Drizzle with the remaining melted butter.
  14. Bake until golden, about 20 minutes.
