- 3 lb. chuck roast
- 1 cup beef broth (may substitute any broth or liquid preferred)
- 2 Tbs. red wine vinegar
- 1 yellow or white onion (sliced into thick slices)
- 3 cloves garlic (whole)
How to cook:
- Place broth, vinegar, onion slices and garlic into the Instant Pot; add frozen roast on top.
- Lock the Instant Pot lid into place, setting the valve to the "seal" or "pressure" position. Using the High Pressure setting on the Instant pot, set the timer for 75 minutes. Bring the Instant Pot to full pressure and walk away to do something else you need to - no Instant Pot babysitting required.
- When the timer on the Instant Pot sounds, remember that meat always needs the NATURAL release (not the quick release) so that the protein fibers can rest and the roast can continue to cook from residual heat.
- Unlock and remove the Instant Pot lid; transfer the cooked roast (it usually comes out in chunks because it will be so tender) to a cutting board. Using two forks, shred the meat apart; season to taste with salt and pepper. Use the shredded beef at once, or place into freezer bags to freeze and use as part of other meals. **Shredded beef will keep up to 6 months in the freezer. Thaw the beef in refrigeration, not on the counter before using.

- Place the trivet in the pot and add the water.
- Place the frozen block of ground beef on the trivet.
- Close the lid and set the steam release knob to the Sealing position.
- Press the Pressure Cook/Manual button or dial, then the +/- button or dial to select cook time in minutes. High Pressure. The pot will take several minutes to come to pressure.
- For 1 lb of meat, cook for 20 minutes, for 2 lbs cook for 23 minutes. In some cases, the meat may not cook all the way through, but will be thawed and you can sauté it if you need it fully cooked.
- When the cook cycle has finished, turn off the pot and let it sit undisturbed for 5 minutes (5 minute natural release). Then turn the steam release knob to the Venting position to release the remaining steam/pressure.
- When the pin in the lid drops back down, open the lid.
- Remove the trivet with the cooked meat on it and move the meat to a plate. The meat will stay in the shape of a block.

- Press the pressure cook button and adjust the time to read 20 minutes (or manual high pressure for 20 minutes). The Instant Pot will take about 10 minutes to come to pressure and then will start counting down the time.
- When the pressure cooking time is complete, quick release the pressure by moving the valve to the venting position. When all the pressure is released, remove the lid.
- Discard the liquid in the Instant Pot and remove the trivet, leaving the ground beef in the bottom of the Instant Pot.
- The beef will be almost completely cooked, with just a bit of pink remaining in the middle. Press the saute button on the Instant Pot and cook, stirring the beef and breaking it up until it is completely browned and crumbled. This will only take about a minute.
- Continue with any recipe that calls for browned ground beef.

- Place a trivet or steam basket inside the pressure cooker pot.
- Add one cup of water or the minimum liquid requirement for your pressure cooker. I used a 6 quarts pressure cooker.
- Add frozen ground beef on top of the trivet, no need to break it down. If you have longer pieces that don't fit, break them in 2 so you can place them on the trivet.
- Place the lid and lock it, make sure to close the sealing valve.
- Pressure cook on high pressure for 20 minutes for 1lb and 23 minutes for 2lbs of meat.
- Once the program is done, do a 5-minute Natural Pressure Release, after that open the valve to release the remaining pressure.
- Using an instant-read kitchen thermometer, take the temperature of your meat, it should be about 160F-165F.
- Poke the center and see if it's still raw, if the meat is still undercooked, transfer it to a bowl, and in the meantime discard the liquid from the inner pot.
- Select sauté mode, once hot add one tablespoon of oil, add the beef, break it down with a wooden spoon, and brown it until done.
- Season with salt, pepper, and taco seasoning if using. If the beef seems a bit dry, add 1 tablespoon of warm beef broth and mix.
- Serve or use in other recipes when ready.
