  • 2 garlic cloves, finely grated
  • 1 28-ounce can crushed tomatoes
  • 2 tablespoons olive oil
  • 1½ teaspoons fine sea salt
How to cook:
  1. Whisk garlic, tomatoes, oil, and salt in a medium bowl. Don’t be tempted to add more salt; the flavor will concentrate when sauce is baked with pizza. Cover and chill 3 hours to let flavors come together before using.
  2. Do Ahead: Sauce can be made 1 week ahead. Keep chilled.

  • 1 (28 ounce) can crushed tomatoes, preferably San Marzano
  • 1 small yellow onion, halved and peeled, about 5 ounces
  • 6 cloves garlic, smashed
  • 2 sprigs basil
  • 1 teaspoon dried oregano leaves, crushed
  • 1 teaspoon kosher salt, plus more to taste
  • A pinch crushed red pepper flakes, plus more to taste
  • 1 tablespoon extra virgin olive oil, to finish

How to cook:
  1. Make the red sauce: In a medium saucepan set over medium-high heat, add tomatoes, onion halves, garlic, basil, oregano, salt, and crushed red pepper. Stir to combine. Bring the sauce to a simmer, reduce heat to medium-low, and partially cover. Allow the aromatics to gently infuse the tomato sauce and cook for 20 minutes. Stir occasionally. Remove from heat, leaving the aromatics in the sauce to continue steeping while it cools.
  2. Remove aromatics from sauce: When the sauce is room temperature, remove and discard the onion halves and basil sprigs. You can also remove the garlic cloves, but I like to keep those in the sauce for a zesty surprise. Stir in the olive oil to finish. Give the sauce a taste and adjust seasoning, if desired.
  3. Make your pizza or store: Spoon the sauce over your prepared pizza crust or refrigerate in an airtight container for up to 1 week.
