- 1 cup milk
- 2 eggs
- Powdered sugar, for topping

- Pour oil about one inch deep into a large saucepan or stockpot. Heat over medium heat until a candy thermometer reads 350°F to 360°F.
- Meanwhile, combine Bisquick™, milk and eggs in a large bowl; stir until well mixed with as few lumps as possible. Pour the batter into squeeze dispenser bottles for easy pouring into the hot oil.
- When oil is fully heated, carefully squeeze batter in a circular motion, close to the oil, until a mini funnel cake forms (don't make more than 2 cakes at a time). Fry 30 seconds on each side until golden brown, then transfer with a slotted spoon to a paper towel-lined baking sheet to drain.
- Repeat with remaining batter, making sure oil temperature stays within 350°F to 360°F.
- Let the cakes drain and cool slightly on a paper towel-lined baking sheet or plate. When all the cakes are fried and slightly cooled, sprinkle the tops with powdered sugar.

Ingredients:
- vegetable oil or shortening for frying
- 2½ cups Bisquick
- 2 tbsp granulated sugar
- ¼ tsp ground nutmeg
- 2 eggs
- ½ cup heavy whipping cream
- 1½ cup whole milk
- 1 tsp vanilla extract
- 4 tbsp salted butter (melted)
- 2 tbsp vegetable oil
- cinnamon sugar for dusting
How to cook:
- In a frying pan, add vegetable oil or shortening at least 3 inches deep. Heat the oil over medium-high heat. You will need the oil to reach a temperature of 375°F for frying the funnel cake bites. Use a thermometer to maintain the temperature.
- While the oil is heating, sift together two and one-half cups of Bisquick, two tablespoons of granulated sugar, and one-quarter teaspoon of ground nutmeg.
- In a separate mixing bowl, beat two eggs until foamy using an electric mixer.
- Add in one-half cup of heavy cream, one and one-half cups of milk, one teaspoon of vanilla extract, four tablespoons of melted butter, and two tablespoons of vegetable oil.
- Add the dry ingredients to the wet ingredients and stir together until well combined.
- Scoop a tablespoon or two of batter into the heated oil. The batter will puff up and brown on the bottom. Flip it over and brown on the other side.
- Place cooked funnel cake bites on paper towels to absorb excess oil.
- Sprinkle cooled funnel cake bites with cinnamon sugar and serve immediately.

- Pour enough vegetable oil in the skillet or pot until it reaches 2 to 3 inches deep. Heat the oil to 350º F, checking it with a candy thermometer or a instant digital thermometer.
- In a medium bowl, mix Bisquick, milk, eggs, and vanilla extract together until the mixture is smooth. The mixture should have the consistency of cake batter and free of lumps.
- Fry the funnel cakes
- Pour funnel cake mixture into a pastry bag or Ziplock bag and seal the top. If using a Ziplock bag, cut the tip from one edge of the bag (about 1/2"). Starting in the middle of the pan or pot, squeeze the batter in a circular swirling motion, creating ribbons of batter to create a 5-inch wide funnel cake.
- Let the funnel cake fry until the bottom of it is golden in color, about 1 minute, then use tongs or a spatula to carefully turn it over. Cook the other side until it is equally golden, about 45 seconds to 60 seconds.
- Use this same process to make the rest of the funnel cakes.
- Carefully remove cooked the funnel cakes with tongs and let rest on a paper-towel lined plate to wick away excess oil.
- To serve
- Sprinkle with powdered sugar, whipped cream, or cinnamon sugar, or your favorite toppings, and serve warm.
