  • 1 skinless, boneless chicken breast half
  • 2 tablespoons butter or margarine, softened
  • 2 cloves garlic, minced
  • 2 tablespoons chopped green onion
  • ½ teaspoon dried basil
  • 1 (10 ounce) can refrigerated pizza crust dough
  • 2 roma (plum) tomatoes, diced
  • ½ cup chopped fresh cilantro
  • ½ cup ricotta cheese
  • ¼ cup grated Parmesan cheese

How to cook:
  1. Place the chicken breast in a saucepan with enough water to cover. Bring to a boil, and cook until no longer pink, about 20 minutes. Drain and cool slightly, then cut into strips.
  2. Meanwhile, in a small skillet over medium heat, melt the butter with garlic, onion and basil. Pour into a chilled dish to cool, and refrigerate until set.
  3. Preheat the oven to 350 degrees F (175 degrees C).
  4. Roll out the pizza dough, place onto a pizza pan or other baking sheet, and spread the herb butter over the surface using the back of a spoon. Arrange chicken on top, then dot with ricotta cheese. Top with tomato slices, cilantro and Parmesan cheese.
  5. Bake for 15 to 20 minutes in the preheated oven, until crust is browned and center is cooked through.

How to cook:
  1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
  2. Preheat oven to 475 degrees F (245 degrees C). Sprinkle a large pizza pan with cornmeal. Roll or pat dough out on a lightly floured surface until it is the diameter of the pizza pan; place on pan.

  • 4 small chicken breasts (or 2 large chicken breasts cut in half, lengthwise)
  • ¼ cup all-purpose flour
  • 1 ½ tbsp. unsalted butter (divided)
  • 1 tbsp olive oil
  • 1 head of garlic (peeled)
  • ½ cup dry white wine
  • 1 cup heavy cream
  • 2 cups packed baby spinach

How to cook:
  1. Season chicken breasts on both sides with salt and pepper.
  2. Dredge
  3. Place flour on a medium plate. Dredge each chicken breast with flour, patting off any excess.

  5. Heat a large skillet with high sides to a medium-high heat. Add one tablespoon butter and olive oil. Once the butter has melted, add the chicken breasts. Sear until golden brown, about 3-4 minutes. Flip and sear until brown, another 2-3 minutes. Remove the chicken breasts from the pan and set aside on a plate. (Do not worry about cooking the chicken all the way through, they will finish cooking later.)
  6. Brown
  7. Add the remaining ½ tablespoon butter to the pan. Turn the heat down to medium and add all the peeled garlic cloves. Toast the garlic until light brown on all sides. Be careful to not burn the garlic.
  8. Simmer
  9. Pour in the wine. Bring it up to a boil and then reduce to a simmer. Simmer until reduced by half. Once the wine has reduced, pour in the cream. Again, bring the cream and wine up to a boil and then reduce to a simmer. Add the chicken back to the sauce, cover and cook until the chicken is cooked through and reaches an internal temperature of 165 degrees.

  11. Once the chicken is cooked, add in the spinach. Shut the lid and simmer for another 1-2 minutes. Remove the lid and toss the spinach with the chicken and sauce until completely wilted. Season to taste with salt and pepper.

  • 1 tablespoon cornmeal
  • 2 tablespoons butter
  • 4 cloves garlic, pressed through a garlic press
  • 2 tablespoons all-purpose flour
  • 1 1/2 cup whole milk
  • 1/2 cup parmesan cheese, grated
  • 2 boneless skinless chicken breast, grilled and sliced thinly
  • 16 ounces mozzarella cheese, grated (about four cups)
  • 1 tablespoon fresh parsley, chopped

How to cook:
  1. Preheat oven 450 degrees.
  2. Sprinkle cornmeal evenly onto a silpat lined 13 by 18 inch baking sheet.
  3. Spread pizza dough to the edges of the pan. If the pizza dough seems to tear as you spread it, just let it sit for 5 minutes, and it will become more elastic and stretch easily.
  4. Cover the dough with a kitchen cloth and allow to rise while you make the sauce.
  5. In a small saucepan, melt butter over medium heat.
  6. Add garlic and saute until soft (30 seconds), but do not burn.
  7. Sprinkle flour over butter and garlic and whisk together for one minute.
  8. Slowly whisk in the milk and let the sauce simmer over medium low heat for 5 minutes or until slightly thickened.
  9. Stir in parmesan cheese and then add the grilled chicken to the sauce and remove from heat.
  10. Spread the garlic sauce and the chicken evenly over the dough, top with mozzarella cheese.
  11. Bake for about 15 minutes, or until cheese is golden brown.
  12. Remove from oven and allow to set for 5 minutes before slicing.
  13. Sprinkle with fresh parsley.
