Banana Bread Muffins

Banana Bread is one of those delightful snacks you can have for breakfast, as a snack in between meals, for afternoon tea or just at any time of the day really. Jesse is a huge fan of banana bread and I thought rather than making a loaf, this time I am going to try a muffin version. They are absolutely delicious. What's even better, if you are taking them as a packed lunch or making them for the kids, they are portable and perfect portion sizes. It's one of the easiest and fastest Thermomix recipes and will leave you feeling super happy and full. You could also make this as a loaf, simply use a 2lb loaf tin, grease with butter and bake the mixture for 60 minutes instead. You could also add up to 100g chopped walnuts or any other nuts of your choice. They go really well.
