Ingredients:
  • 1 to 2 lbs boneless, skinless Chicken Thighs or Chicken Breasts (Each bag gets 1-2 lb plus seasoning choices below)
  • 1 tbs Lemon Juice
  • 1 tsp dried Ginger
  • 1/4 tsp Sea Salt
  • 1/4 cup Olive or Avocado Oil
  • 1 tbsp Italian Seasoning
  • 1/4 tsp Sea Salt
  • 1/4 cup Olive or Avocado Oil
  • 2 tbsp Lime Juice
  • 2 tbsp Honey
  • 1 bunch Cilantro (chopped finely)
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Sea Salt
  • 1/4 cup Olive or Avocado Oil
  • 1/4 cup Coconut Aminos (see notes to make coconut-free)
  • 1/4 cup Honey
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Sea Salt

  • 1 tsp dried Oregano
  • 1 tsp dried Basil
  • 1/2 tsp dried Dill

How to cook:
  1. Combine all of the ingredients into a freezer bag.
  2. If making for tonight, marinate for 2-12 hours. If freezing, put into the freezer and then thaw in the fridge overnight or putting the bag into a bowl of cold water for a few hours.
  3. OVEN:
  4. Bake in a 425 F oven for 20-25 min, or until the internal temp is 165 F.
  5. OR GRILL:
  6. Preheat the grill to med-high. Grill chicken for 6-8 min a side or until internal temp is 165 F.

Ingredients:
  • 1/2 cup freshly squeezed orange juice
  • 2 TBSP apple cider vinegar
  • 3 TBSP coconut aminos
  • 1 TBSP maple syrup
  • 2 TBSP olive or avocado oil
  • 1 lb ground chicken (or turkey)
  • 1 tsp sea salt
  • 1-inch piece ginger, grated or minced
  • 4 cloves garlic, crushed
  • 1 TBSP orange zest
  • 1/2 TBSP tapioca starch + 1/4 cup water
  • green onions (for garnishing, optional)
How to cook:
  1. In a small bowl combine orange juice, apple cider vinegar, coconut aminos and maple syrup and set aside.
  2. In a large skillet, heat oil on medium heat.
  3. Once hot, add ground chicken, salt, ginger, garlic and orange zest and brown the meat, leaving clumps of ground chicken together for some texture if desired.
  4. Once the chicken is fully cooked, lower the heat slightly and add the orange sauce.
  5. Bring to a simmer and then combine tapioca starch and water to make a slurry. Stir slurry into the dish until the sauce begins to thicken.
  6. Remove from heat, garnish with sliced green onions and enjoy!

Ingredients:
  • 1 zucchini (about 1 pound)
  • 2 tablespoons coconut oil
  • 3/4 pound boneless skinless chicken breasts
  • Fine sea salt, to taste
  • For the sauce:
  • 1 cup chicken broth
  • 11/2 tablespoons arrowroot flour
  • 1 cup full fat coconut milk
  • 2 teaspoons nutritional yeast
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon fine sea salt
  • Garnish:
  • Minced fresh parsley
How to cook:
  1. Cut top and bottom of zucchini, then cut in half. Using a spiralizer, make the zucchini into noodles. Set aside.
  2. Pat chicken breast dry with paper towel and season with salt to taste on both sides. Heat coconut oil in a skillet over medium heat. Add chicken to the hot skillet and cook until golden and no longer pink inside, about 8 minutes on each side (or until it reaches an internal temperature of 165°F). Transfer chicken to a cutting board and let rest for 3 minutes before slicing into 1/2-inch thick strips.
  3. In a small bowl, whisk together chicken broth and arrowroot flour, making sure flour is completely dissolved and there are no lumps. (alternatively, you can also do this in a blender).
  4. Using the same skillet, whisk together coconut milk, nutritional yeast, basil, garlic, and salt. Bring to a low boil over medium heat. Reduce the heat to medium-low and add broth mixture, stirring constantly until sauce thickens a bit, about 2 minutes. Check seasoning and adjust to taste.
  5. Add zucchini noodles to the skillet and toss, making sure all the noodles are well coated with the sauce. To serve, transfer noodles to dinner plates, top with sliced chicken and a garnish of minced parsley.

  • 1 red onion, sliced
  • 1 tablespoon coconut oil, more as needed
  • 6 chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1/2 cup canned coconut cream
  • 1/2 cup bone broth (code CASTAWAY for 25% off)
  • 1 lime zested
  • 2 limes, juiced

How to cook:
  1. Heat a large skillet over medium heat. While it comes to temperature slice your onion. Melt the coconut oil in the skillet and add in the onion. Saute until tender.
  2. While the onion cooks, pat your chicken dry and season with salt and oregano.
  3. When the onion is tender, move it aside, add more oil to the skillet if needed and out the chicken thighs in the skillet so they are laying flat. Put the onion on top of them.
  4. Sear for 4 minutes each side. Then add in the lime zest, then the lime juice, broth and coconut cream. Mix up.
  5. Use tongs to accommodate everything in the skillet, so your chicken has full contact with the bottom of the skillet and is surrounded by sauce and onions. Cover with a tight-fitting lid and lower the heat to simmer. Cook here for 15 minutes.
  6. Open the lid, if you want less sauce, bring up the heat and reduce it for a few minutes. Garnish with cilantro and lime slices. Dig in!
