  • 12 oz Gluten-Free Penne*
  • 1 Pint of Grape or Cherry Tomatoes (halved)
  • 2 Cups Sliced, Quartered English or Persian Cucumber
  • 1 Cup of Sliced, Chopped Green Bell Pepper
  • 1/2 Cup Thinly Sliced Red Onion
  • 1/2 Cup Halved Kalamata Olives**
  • 1/3 Cup Extra Virgin Olive Oil
  • 2 TB Red Wine Vinegar
  • 2 Tsp Lemon Juice
  • 2 Tsp Dried Oregano (plus more to garnish)
  • 1 Tsp Minced Garlic
  • Salt & Black Pepper (to taste)

How to cook:
  1. Boil the gluten-free penne according to package directions, just to al dente to keep the noodles from getting mushy.
  2. In the meantime, slice and chop the bell pepper, cucumber, tomatoes, red onion, kalamata olives and toss them into a large bowl.
  3. Drain and rinse the pasta under cold water to stop the cooking process before adding them to the chopped veggies.
  4. In a small bowl, measure and whisk together the olive oil, vinegar, lemon juice, and seasonings before adding the vinaigrette to the pasta salad.
  5. Gently mix and toss everything together in the bowl to combine.
  6. Let the pasta salad marinate and chill in the fridge, for at least 30 minutes (preferably overnight), before serving.
  7. Enjoy cool, at room temperature.

  • 4 oz thinly sliced prosciutto
  • 1/4 cup Cedar's Lemon Hommus
  • 1 tablespoon dijon mustard
  • 1/2 lemon, (juice)
  • 1/3 cup warm water
  • 1/4 teaspoon black pepper
  • 2 english cucumbers, (sliced into half moons)
  • 1/4 cup very thinly sliced red onions
  • 1 cup cherry tomatoes, (halved)
  • 1/4 cup fresh mint, (chopped)

How to cook:
  1. Cook the pasta.
  2. Preheat the oven to 400° F and cook pasta according to box instructions, or until al dente. When finished, transfer to a colander and rinse with cold water to stop the pasta from cooking longer.
  3. Bake the prosciutto.
  4. Arrange the prosciutto on a foiled baking sheet in a single layer. It's ok if the prosciutto tears or isn't perfectly flat, it will still get crispy! Bake for 10-12 minutes or until crispy. When finished, allow to cool and transfer to a cutting board. Roughly chop the prosciutto with a sharp knife.
  5. Make the dressing.
  6. While the pasta and prosciutto are cooking, mix together the Lemon Hommus, dijon mustard, lemon juice, warm water, and black pepper.
  7. Mix the pasta salad.
  8. In a large mixing bowl, add the cooked pasta and half the dressing. Toss until noodles are fully coated. Then add crispy prosciutto, cucumbers, red onions, charry tomatoes, mint, basil, and feta cheese. Toss to combine and add more dressing as needed, or serve on the side.

  • 1 cup uncooked lentil pasta or chickpea pasta
  • 2-3 cups halved cucumbers
  • 1 cup thinly sliced red onion
  • 1 cup halved grape tomatoes
  • 1/4 cup roughly chopped fresh dill
  • 1/4 cup halved kalamata olives
  • 1 tablespoon red wine vinegar
  • 1 tablespoon good quality olive oil
  • 1 tablespoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • Optional: Feta cheese
How to cook:
  1. Bring a large pot of salted water to a boil. Prepare pasta according to package instructions, cooking until al dente. Drain and let cool. Set aside.
  2. In a large bowl, toss together cucumbers, onion, tomatoes, dill, and olives. Set aside.
  3. In a small bowl, mix together vinegar, oil, and spices.
  4. When pasta is fully cooked, add to large bowl with vegetables. Drizzle dressing on top and toss together. Add feta cheese, if desired.
