Ingredients:
- 1 Tube Refrigerated crescent rolls
- 1/2 Cup Whole almonds (raw)
- 1 Tbsp Salted butter (melted)
- 2 tsp Sugar
- 1/4 tsp Cinnamon
- 1/2 Cup Soft goat cheese
- 1/2 Cup Cranberry sauce (homemade or canned)

- Preheat oven to 375 degrees
- Chop almonds coarsely with a sharp knife. Place the chopped almonds in a bowl and add the melted butter, sugar and cinnamon. Stir to combine and set aside.
- Take crescent rolls out of the tube and carefully unroll them onto a large piece of parchment paper. Pinch together any seams that have separated.
- Place another large piece of parchment on top of the crescent rolls and with a rolling pin roll into a rectangle about 10x16 inches.
- Carefully remove the top layer of parchment, then cut the crescent rolls into 24 small squares. (A pizza cutter makes this easy)
- Lightly spray 24 mini muffin cups with non-stick spray and then gently press each square into a cup.
- Add a scoop of goat cheese, then a scoop of cranberry sauce, then top each tart with the almonds.
- Place pans in the oven and bake for 15 minutes until tart shells are lightly browned.
- Let cool about 5 minutes and then remove from the tins and serve.

Ingredients:
- 1 package puff pastry, defrosted
- 1 cup cranberry sauce
- Zest of one orange
- 1/2 cup goat cheese crumbles
- 2 Tbsp fresh thyme leaves, chopped
How to cook:
- Preheat oven to 400 degrees.
- Slightly roll out puff pastry sheets with a rolling pin. Using a biscuit cutter or cookie cutter, cut 1 1/2” rounds. Place these rounds on a baking sheet lined with a silicone mat or parchment paper.
- Using a smaller biscuit cutter or a small knife, create a border just inside the end of the pastry rounds (you are creating a little crust by doing this). Poke the inner circle with a fork all over.
- Spread each inner circle with 1 to 2 tsp of cranberry sauce. Top with a pinch of orange zest and crumbled goat cheese.
- Bake for 15 minutes.
- Remove from the over and sprinkle each with fresh thyme leaves. Serve immediately.

- 4 to 6 sheets of Filo pastry
- 2tbsp milk
- 2tbsp cranberry jelly
- 70g Goats Cheese cut into 12 cubes
How to cook:
- Preheat oven to 200°C/400°F/Gas Mark 6.
- You will need a 12 hole bun tin.
- Cut the filo pastry into 24 x 3” squares.
- Lay one square each into the bun tin hole.
- Dab each square with some milk and cover with the remaining filo square, at an angle.
- Spoon a teaspoon of cranberry jelly into each filo case and place a cube of Goats Cheese on top.
- Bake for 15 mins.
- Remove from the oven and serve immediately.

Ingredients:
- 320g Jus-Rol™ ready-rolled Shortcrust Pastry
- Flour, for dusting
- 150g goats cheese
- 4tbsp cranberry sauce
- Small bunch fresh parsley, finely chopped
How to cook:
- Preheat the oven to 200°C (Fan 180°C) Gas 6.
- Unroll the pastry on a lightly floured, clean surface. Using an 8cm (3.5 inch) cutter, stamp out 12 rounds and press into a lightly greased 12-hole bun tin. Prick each base with a fork and line with a small piece of kitchen foil and fill with baking beans. Bake for 8-10 minutes, until the pastry is lightly golden. Remove the foil and baking beans and return to the oven for 2-3 minutes.
- Turn down the oven to 180°C (Fan 160°C) Gas 4.
- Place a slice of goat’s cheese in the base of each pastry case. Return to the oven for 2-3 minutes, until the cheese is slightly melted. Allow to cool for a minute before removing from the tin. Top with a teaspoon of cranberry sauce and decorate with the chopped parsley – serve warm.
