  • 9 pork sausages
  • 2 eggs
  • 150 g plain flour
  • 185 ml milk
  • 1/2 tsp salt
  • 1/8 tsp ground black pepper
  • 1 1/2 tbsp vegetable oil

How to cook:
  1. Add the oil to an oven-proof pan/tray - mine is a square 23cm, 9 inches.
  2. Arrange the sausages in the pan, and bake in the preheated oven at 220 degrees Celsius (430 Fahrenheit) for 15 minutes or until golden brown and fully cooked.
  3. Meanwhile, make the batter.
  4. Sift the flour in a large pan, and make a well in the middle.
  5. Add the eggs, and whisk well to get a paste. (or use a hand mixer).
  6. Pour in the milk whisking well to get a smooth batter, then season with salt and pepper.
  7. If the batter is not smooth enough, pass it through a sieve to get the right texture.
  8. When the sausages are cooked, pour over the batter, and bake for a further 20-25 minutes or until golden and fully risen.

How to cook:
  1. Add milk, flour, eggs, and salt to a large mixing bowl. Whisk to form a smooth batter. Cover this bowl with a plastic wrap and refrigerate for about an hour. Now, cook the sausages until they're brown and put them aside to cool.
  2. Place an oven-proof baking pan containing vegetable oil in the center of the oven. Let the oil smoke and then, remove the pan from the oven. Immediately pour in the batter and push the sausages evenly into the batter, all around the pan.

  • 2 tsp vegetable oil
  • 155g bottle pancake shaker mix
  • 1 large egg, beaten
  • 180g pack curly kale
  • 350g broccoli, cut into florets
  • 4 heaped tsp onion gravy granules

How to cook:

  2. Meanwhile, shake the bottle of pancake shaker mix to loosen. Pour in the beaten egg and 200ml cold water. Replace the cap and shake the bottle for 2 mins or until the mixture is smooth.
  3. Remove the sausages from the oven and increase the heat to gas 7, 220°C, fan 200°C. Gently shake the tin to move the sausages around a little, then pour the batter equally into the 8 holes so the sausages just poke through the top. Return to the oven and bake for 15-17 mins until puffed up and golden (do not open the oven door before this).
  4. Meanwhile, simmer the kale in a pan of boiling water for 6 mins, adding the broccoli after 2 mins. Drain. Put the gravy granules in a measuring jug and add 280ml boiling water. Whisk for 1 min or until smooth. Serve with the mini toad-in-the-holes, kale and broccoli.

How to cook:

  3. Preheat the oven to 400*. Place the sausages side by side in a heavy 10 to 12-inch skillet, and prick them once or twice with the tines of a fork. Sprinkle them with 2 Tblsp. of water, cover the pan tightly, and cook over low heat for 3 minutes.
  4. Then remove the cover, increase the heat to moderate, and continue to cook, turning the sausages frequently with tongs or a spatula, until the water has completely evaporated and the sausages have begun to brown in their own fat.
  5. Arrange the sausages in a single layer in a baking dish or tin about 6 by 10 inches and 2 inches deep, and moisten them with 2 Tblsp. of their drippings. Keep them at least and inch apart.
  6. Then pour the batter over them and bake in the middle of the oven for 30 minutes, or until the pudding has risen over the top of the pan and is crisp and brown. Serve at once.
