Ingredients:
  • 1 pie crust (unbaked 9-inch )
  • 8 cups apples (about 3 pounds)
  • 1/2 cup sugar
  • 1/4 cup flour
  • 1/2 teaspoon ground cinnamon (more if desired)
  • 1/4 teaspoon ground cloves (more if desired)
  • 1 tablespoon cider vinegar (adds more flavor)
  • 1/2 cup butter (diced and chilled)
  • 1 cup flour
  • 2/3 cup brown sugar (packed, or use white sugar)
  • 2 tablespoons sugar
  • Pinch salt

How to cook:
  1. Pie
  2. Heat oven to 400°F.
  3. On a floured surface roll dough into a circle roughly 2 inches bigger than a 9-inch pie plate.
  4. Place the pastry in the pie plate, pressing down slightly.
  5. Put the pastry lined pie plate in the freezer while preparing apples.
  6. Peel and core apples. Cut into 1/2-inch thick slices.
  7. In a large bowl toss the apples and everything else that remains except the topping ingredients.
  8. Remove the pie plate from the freezer. Spoon apple mixture into the pastry lined pie plate, mounding the apples up in the center.
  9. Crumb Topping
  10. Use your fingers to mix the butter, flour, brown sugar, and salt until it is a mass that holds together then crumbles when you squeeze it.
  11. Sprinkle it on top of the filled pie.
  12. Sprinkle with the 2 tablespoons of sugar.
  13. Bake 40 to 55 minutes or until pie crust and crumb topping are deep golden brown and filling begins to bubble.

Grandma's Dutch Apple Pie
I asked my grandma for her famous Dutch apple pie recipe the other day, and it was as good as I remember, so I'm sharing it with the world.

Ingredients:
  • || Crust ||
  • 3 cups All Purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup butter, chilled
  • ½ cup buttermilk, plus 2 tablespoons
  • || Filling ||
  • 4 large apples, any variety but I prefer Granny Smith
  • 1 cup sugar
  • 1/4 cup flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • pinch of salt
  • || Crumble ||
  • 1 cup flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted
How to cook:
  1. Mix the dry ingredients together in a large bowl. Grate the chilled butter and toss with the dry ingredients.
  2. Start to work the butter in with your hands until the mixture starts to look buttery and the flecks of butter in the dough are pea-sized or smaller. Drizzle in the buttermilk, and toss together with a fork until it’s too stiff to work anymore. Use your hands to fold the dough and squeeze the dough together to make one dough ball.
  3. Shape the dough into a disk about the size of a dinner plate. Wrap in plastic wrap and place in the fridge for 30 minutes.
  4. Roll out dough as thin as you can get it. About a 12-inch circle.
  5. Place dough onto a small 9-inch pie plate. Cut the edges around leaving a 1-inch overhang. Fold the overhang over and crimp. Place crust back in the fridge while making the filling.
  6. For the apple decoration, use the scraps to cut out shapes with an apple-shaped cutter. Brush with egg wash (1 egg yolk, 1 tablespoon whole milk). Bake for 15-20 minutes at 400 degrees. Remove from oven and cool.

  8. Peel and thinly slice apples and toss into a medium sized bowl. Toss the apples with the sugar, flour, cinnamon, nutmeg and salt. Set aside.
  9. Preheat the oven to 400 degrees.
  10. || Crumble ||
  11. Mix all filling ingredients together until crumbly.
  12. || Assemble ||
  13. Give the apples another toss before pouring into the pie shell. Evenly top the pie with the crumble and place in the oven for 45 – 50 minutes.
  14. Let cool for 1-2 hours before serving. Top with apple-shaped crust decoration.

Ingredients:
  • 2 1/2 cups (300 g) white flour
  • 11 tbsps (150 g) cold butter, cubed
  • 1 1/2 eggs
  • 2 - 3 tbsp. cold water
  • 7 to 10 Granny Smith apples, peeled and sliced (number of apples depends on the size of your pie)
  • ½ tsp salt
  • 1 to 2 tsp cinnamon
  • ¾ cup sugar
  • 1 tbsp lemon juice
  • ¼ cup corn starch
  • 1 cup (120 g) flour
  • ½ cup (1 stick) butter, chilled and cut into marble-sized chunks
  • ½ cup brown sugar
  • ¼ cup pecans, crushed (optional)
How to cook:
  1. Place flour in large bowl. Add cold butter cubes and rub mixture with palms and finger tips until mixture resembles fine sand. Alternatively, place flour and butter in food processor bowl and pulse until mixture resembles texture of fine sand. Add 1 1/2 eggs and stir until mixture starts to form a ball. If required, add 2-3 tbsps. of ice cold water and mix until dough hangs together in firm ball shape. Turn the dough out onto a lightly floured surface and knead several times until it forms a firm ball. Wrap in plastic and place in fridge for at least 15 minutes. Roll out the dough with a rolling pin until it measures about 1.5 inches larger than the dimensions of your pie pan. Trim the dough using kitchen scissors so that 1 inch of dough overhangs the pie pan. Tuck the edges of the dough under at the edges and then form into fluted edges. Set the dough aside.
  2. Peel, core and slice the apples into pieces about 1 inch long. In a large bowl, combine the apples, salt, cinnamon, lemon juice and corn starch.
  3. In a separate bowl, rub the chilled butter, flour, brown sugar and crushed pecans (optional) together with your fingers until the texture resembles marbles. (If the butter becomes too soft, the mixture will become like a ‘melted, sticky glob.’ In this case, place the mixture in the fridge for a few minutes until the butter hardens again). Pour the apple filling into the prepared pie dough until it reaches the rim of the pie pan. Top with the crumble mixture. Bake for 10 minutes at 425 F (220 C) for 10 minutes, then reduce to 375 F (190 C) for another approximate 25 minutes, or until the apples turn soft when inserted with a fork or probe. If the crust starts to burn, cover with foil for the remainder of the baking time. Cool slightly and serve plain or with whipped cream or ice cream.
