Ingredients:
  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • 8 ounces green beans, trimmed
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon sriracha or other hot sauce
  • Fresh lemon juice, as needed
  • 2 ounces crumbled blue cheese
How to cook:
  1. In a large skillet over medium-high heat, heat the butter and oil. When hot, add the green beans in one layer. When the beans are just beginning to color, stir them around and add the Worcestershire, sriracha and lemon juice. Cook until the beans are crisp-tender, a few more minutes. Transfer them to a plate, crumble over the blue cheese and serve.

  • 5 slices thick-cut bacon
  • 1 red onion, sliced thin
  • 1 jalapeño, seeded and diced small
  • 1 1/2 pounds green beans, trimmed
  • 1 cup chicken stock
  • 1 teaspoon garlic powder
  • Kosher salt and freshly ground black pepper
  • 1/4 cup fried onions
How to cook:
  1. Place the bacon in a large cast-iron skillet over medium heat and cook until crisp, 8 to 10 minutes. Remove the bacon and all but 2 to 3 tablespoons of the bacon grease.
  2. Add the onion and jalapeño and cook for a minute or two, then add the green beans. Cook until the green beans are bright green, an additional minute. Add the chicken stock, garlic powder and a good pinch of both salt and pepper. Bring to a simmer and lightly cover, allowing the some of the steam to escape. Cook until the liquid is evaporated and the beans are starting to soften, but still have a bite, 10 to 12 minutes.
  3. Transfer the beans to a serving vessel. Crumble the bacon and sprinkle it over the top of the beans, along with the fried onions.

Skirt Steak with Blistered Green Beans
This steak with blistered green beans is packed with flavor. The quick soy-ginger marinade works like magic!

Ingredients:
  • 1 3/4 lb. skirt steak, cut into 6 equal pieces
  • 1/2 c. low-sodium soy sauce
  • 3 garlic cloves, minced
  • 2 tbsp. grated fresh ginger
  • 2 tbsp. chili paste (sambal oelek)
  • 2 tbsp. packed light brown sugar
  • 6 scallions, thinly sliced (white and green parts separated)
  • 1/4 c. olive oil
  • 3 tbsp. salted butter
  • 1 1/2 lb. green beans, trimmed
  • 4 oz. shiitake mushrooms, stemmed and thinly sliced
  • 1 tsp. toasted sesame seeds
How to cook:
  1. Place the steak pieces in a 1-gallon resealable plastic bag. Whisk the soy sauce, garlic, ginger, sambal oelek, brown sugar and scallion whites in a liquid measuring cup. Pour the marinade over the steak. Seal the bag, squeezing out as much air as possible. Let marinate for at least 10 minutes and up to 1 hour.
  2. Heat 2 tablespoons each olive oil and butter in a large cast-iron skillet over medium-high heat. Remove the steakfrom the marinade and pat dry. Working in two batches, add the steak to the skillet and cook 3 to 4 minutes per side for medium rare. Remove to a cutting board and let rest while you cook the vegetables.
  3. Add the remaining 2 tablespoons olive oil and 1 tablespoon butter to the skillet. Add the green beans and mushrooms and toss to coat. Cook, undisturbed, until the green beans are beginning to brown and blister in spots, 2 to 3 minutes. Toss the vegetables and continue cooking, tossing occasionally, until the green beans are tender and the mushrooms are browned, 5 to 7 more minutes.
  4. Slice the steak against the grain. Serve the steak with the vegetables and sprinkle with the sesame seeds and scallion greens.

How to cook:
  1. Add the bacon and onion to a large skillet over medium heat. Cook, stirring, until the bacon is beginning to crisp and the onions are golden, 5 to 7 minutes.
  2. Increase the heat to medium high and add the green beans and tomato paste. Stir and allow to cook for a minute or two. Add the tomatoes, crushing them with your hands as you add them. Stir to combine. Season with salt, pepper and cayenne. Bring the mixture to a simmer and simmer until thickened and the beans are soft but still green, 5 to 7 minutes.
