  • 14 oz (400g) brown or green lentils, washed and soaked in water overnight
  • 1/4 cup or more olive oil
  • 2 carrots, peeled and diced
  • 1 small onion, finely chopped
  • 1 celery rib, diced
  • 3-4 cloves of garlic, chopped
  • 3 bay leaves
  • 15 oz (425g) crushed tomatoes
  • 1 teaspoon of salt or to taste
  • 1/2 teaspoon crushed black pepper or to taste
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 8 cups vegetable broth or water
  • 1 teaspoon dried oregano
  • 2-3 tablespoons finely chopped fresh parsley
  • For serving: vinegar, olives, feta cheese
How to cook:
  1. Add the onion, carrots, celery, and olive oil to the Instant Pot and season with a pinch of salt. Set it to the Sauté feature for about 10 minutes or until soft and golden. Add the garlic and saute 2-3 minutes longer.
  2. Add the lentils, bay leaves, water, salt, pepper, tomatoes, and crushed red pepper flakes.
  3. Cover the instant Pot and set the valve to seal. Pressure cook on High for 10 minutes and allow it to slow release for 15 minutes. Open the valve to release any remaining pressure.
  4. Taste and adjust the seasoning if needed. Add the oregano and stir to combine. Garnish with finely chopped parsley.
  5. Serve drizzled with some good quality olive oil and a splash of vinegar and some feta with olives on the side.

How to cook:
  1. Set Instant Pot to Saute. Add olive oil and wait 30 seconds to heat up.
  2. Add onion, garlic, carrots, celery, salt, pepper, and saute for 2 minutes.
  3. Add tomato paste, orange slices, bay leaves, cinnamon, red pepper flakes and saute for 1 more minute.
  4. Add lentils, grated tomato, and water. Stir well. Secure cover on Instant Pot.

  • 3 cloves garlic
  • 1 large yellow onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced

How to cook:
  1. Select Saute setting on your Instant Pot and heat 2 tablespoons of the oil and the garlic for 2 minutes, until the garlic is bubbling but not browned. Add the onion, carrots, celery and salt and saute for about 3 minutes, until onion has softened. Add the oregano and pepper and cook for another minute. Add lentils and broth and stir to combine. Add tomato paste in a dollop on top but don’t stir it in.
  2. Secure the lid and set the pressure release to sealing. Press the cancel button to reset the cooking process, then select the Pressure cook or Manual setting adn set the cooking time for 25 minutes at high pressure. The cooker will take about 10 minutes to come up to pressure.
  3. When the cooking program ends, let the pressure release naturally for about 15 minutes, then move the pressure release to Venting to release any extra steam. Open pot and stir the soup to incorporate ingredients.
  4. Ladle the soup into bowls and drizzle with red wine vinegar and sprinkle with parsley. Serve immediately.

How to cook:
  1. To prepare this Greek lentil soup recipe, start by washing the lentils thoroughly and let them soak in water for about 2 hours. If you like, you can skip this process by adding them into a deep pan along with some water and place over high heat. As soon as they come to the boil, drain them into a colander.
  2. Place a pan over medium-low heat and add the lentils, the water (warmed), the chopped onions, the chopped garlic and the bay leaves. Simmer with the lid on for about 25 minutes.
  3. Pour in the olive oil and the red wine vinegar, and season well with salt and pepper. If you prefer your Greek lentil soup to be ‘reddened’, then add 1 tablespoon of tomato paste.
