As my friend Mark says, Elk is certainly one of the best exotic game meats, and It's in the quality range with moose and bison meat. So, when preparing to make this Elk Burger recipe, and getting this recipe from my friend Mark, I knew it must be something out of this world. Just to give you a heads up, these Elk Burgers aren't your ordinary burgers. These are very expensive at restaurants, like this one at Harbor Light Restaurant is 14$, and that's a middle price range. It is possible that you don't have all the necessary ingredients for this Elk burger. However, you can get them really easy. This may just turn out to be your preferred Elk Burger recipe! I've got this recipe from a dear friend of mine Mark, who is a specialist in all kinds of burgers. Oh, and always use nice buns for these burgers. What is healthier Elk or Beef meat? As an alternative, I'd choose from these: lettuce, mayonnaise, tomatoes, onions, and pickles. You could serve Elk burgers on grilled sourdough, topped with cheddar cheese. - If you are starting with fresh chiles, roast them, remove the skins and seeds, salt them and set aside. You can either keep them in fairly large pieces if they are well-roasted, or chop them roughly. Your call. This can be done a few days ahead of time, and of course you can use canned or frozen chiles.
- Make four burger patties. I prefer one-third pound burgers, but you can make them any size you want. Pro tips: Press the weighed out ground meat into a large circle mold for more even patties. Press a dimple about the diameter of a walnut in the center of each patty - this prevents them from balling up when cooked. Salt your patties well.
- Cooking Options
- Grilling. Get your grill hot. Scrape down the grates well, and grill your burgers with the grill cover open. Leave them on the grates for at least 3 or 4 minutes so you get grill marks and a good crust. Flip and cook to order. Typically a medium burger will need another 3 minutes.
- Stovetop. Preheat oven to 200°F and set a rack over a baking sheet. Heat a cast iron pan or pan that can handle high heat over medium high heat. When it's hot, slick the pan with some canola or other high smoke point oil, like grapeseed or safflower. Set the patties down and press gently with a spatula to get good contact with the pan. Leave them for at least 3 or 4 minutes so you get a good crust. Flip and cook to order. Typically a medium burger will need another 3 minutes.
- No matter how you cook your burgers, when you flip them, lay the chiles over them, then cover with a slice of cheese. Close the grill cover or put a lid over the pan to melt the cheese.
- On the stovetop you usually have to cook in batches, so you will put each finished burger in the warm oven as you do the rest.
- When you are ready, paint your burger buns with the butter or oil and set them on the grill or pan to brown. Keep an eye on the buns so they don't burn. Set aside once browned to your liking.
- Build your burgers. I like to go bun, lettuce, tomato slice, patty, bun. But do whatever you like best. Enjoy!

- 28-32 oz ground elk
- Kosher salt and freshly ground black pepper
- Hamburger buns
- 1/3 C mayonnaise
- 2 Tbsp harissa
- 2 oz fresh goat cheese
- fresh baby arugula
How to cook:
- Set up your grill for two-zone cooking and preheat it.
- Portion the elk into patties, about 7–8 oz each.
- Season the elk patties well on both sides with salt and plenty of black pepper.
- Place the patties on the grill in the indirect-cooking zone. Insert the probe from a ChefAlarm into one of the burgers. (We used the optional 2.5″ needle probe.)
- Set the high-temp alarm for 130°F (54°C). Close the lid on your grill and cook.
- When the high-temp alarm sounds, move the burgers to the direct-heat cooking zone.
- Cook, turning every 40 seconds or so until nicely seared and the internal temperature reads 157°F (69°C) on your Thermapen ONE.
- Remove the burgers to a platter and allow them to rest. Toast the buns on the grill.
- Mix the harissa and mayo together until well blended.
- Spread mayo/harissa on the bottom of each bun, top each with a burger, top with crumbles, then arugula, then the top bun which is also spread with more of the sauce.
- Serve with cold drinks and enjoy!

- Once the butter has melted, add the elk burger patties to the pan. Cook for 4 minutes, then flip the patties over.Cook an additional 2 minutes, then add cheese, if using.Cook for 2 more minutes, or until the internal temperature reaches 140-145 degrees.
- Remove patties. Add to a hamburger bun, along with desired toppings.
