Ingredients:
- 5 green tomatoes (1kg), sliced
- 1 brown onion (150g), sliced
- 1 kilogram gherkin cucumbers, chopped
- 1 green capsicum (150g), chopped
- 1/2 cup coarse cooking salt
- 2 cup (500ml) cider vinegar
- 1 cup (250ml) white vinegar
- 1 teaspoon mustard powder
- 1/2 teaspoon ground allspice
- 1/4 teaspoon mixed spice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground black pepper
- 1 cup (200g) firmly packed brown sugar

- Combine vegetables in large bowl, sprinkle with salt, cover; stand several hours. Rinse under cold water; drain well.
- Combine vegetables, vinegars and spices in large saucepan. Bring to a boil; simmer, uncovered, stirring occasionally, about 45 minutes or until vegetables are pulpy. Add sugar; stir over heat, without boiling, until sugar is dissolved. Bring to a boil; boil, uncovered, 15 minutes. Pour into hot sterilised jars; seal when cold.

Ingredients:
- 2 kg green tomato
- 1 kg onion
- 1/2 cauliflower small
- 1 cucumber small
- 2 L water
- 1 cup salt
- 1/2 cup plain flour
- 2 1/2 cup brown sugar firmly packed
- 1 1/2 tsp mustard powder
- 2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 1/2 tsp curry powder
- 2 1/2 cup malt vinegar
How to cook:
- Chop vegetables into small pieces and place in a large glass bowl. Cover with water and add salt.
- Cover and leave to stand overnight.
- Transfer to large saucepan and bring to the boil. Boil for 2 minutes. Drain.
- In another saucepan combine flour, sugar, and spices.
- Mix to a smooth paste with a little vinegar.
- Add remaining vinegar and boil until mixture thickens.
- Add vegetables, bring back to boil and boil until vegetables are cooked, approximately 1 minute.
- Remove from heat and bottle in sterilised jars.

Ingredients:
- 5 pounds green tomatoes, chopped
- 1 large onion, chopped
- 2 tablespoons pickling salt
- 1 ½ cups firmly packed brown sugar
- 2 cups cider vinegar (5% acidity)
- 2 teaspoons mustard seeds
- 2 teaspoons whole allspice
- 2 teaspoons celery seeds
- 1 ½ teaspoons whole cloves
- 3 cups water
How to cook:
- Sprinkle tomato and onion with pickling salt; let stand 4 to 6 hours. Drain and pat dry with paper towels; set aside.
- Combine brown sugar and vinegar in a Dutch oven; cook over medium heat, stirring constantly, until sugar dissolves.
- Place mustard seeds and next 3 ingredients on 6-inch square of cheesecloth; tie with string. Add spice bag, tomato, onion, and 3 cups water to vinegar mixture.
- Bring to a boil, stirring constantly; reduce heat, and simmer, stirring occasionally, 25 minutes or until tomato and onion are tender. Remove and discard spice bag.
- Pour hot mixture into hot jars, filling to 1/2 inch from top. Remove air bubbles; wipe jar rims. Cover at once with metal lids, and screw on bands.
- Process in boiling-water bath 10 minutes.

How to cook:
- Combine the onions and tomatoes in a bowl.
- Sprinkle with the salt and mix well.
- Cover and leave to stand overnight, or for several hours at least.
- Pour mixture into a colander to drain off any excess liquid.
- Place onions and tomatoes in a large saucepan, and add the vinegar, sugar, curry and mustard powders.
- Bring the mixture to a boil.
- Boil for one hour, stirring often.
- Pour into warm sterilised jars and seal immediately.
