How to cook:
- Place the tomatoes, onion and salt in a bowl and leave overnight.
- Next day, drain off the fluid.
- Place the tomatoes and onions in a large saucepan. Add the vinegar, sugar, curry powder and mustard and bring to the boil.
- Boil for 1 hour, stirring often.
- Pour into warm sterilised jars and seal immediately.

Ingredients:
- Bunch of green grape tomatoes, enough to fill 2-3 small jars
- 1 cup apple cider vinegar
- 1 cup water
- ½ cup white sugar
- 2 cm slice of dried chilli for each jar
- 1 tsp yellow mustard seeds
- ½ tsp back mustard seeds
- 1 tsp celery seeds
- ½ tsp black peppercorns
- ½ tsp whole all spice
- ½ tsp cloves
- a bay leaf for each jar
How to cook:
- Pick the grape tomatoes off the stems, wash and pop into the jar with the pickling spices. Ensure that each jar is firmly packed to the top.
- In a saucepan bring water, vinegar and sugar to the boil and pour the mixture into each jar, seal the jar and pop it into the fridge. They will keep for 2-3 weeks.

Ingredients:
- 4 large tomatoes, red or green*
- 4 large onions, brown or white
- 2 cups brown vinegar
- 2 cups white sugar
- 2 dessertspoons each of dry mustard
- powder and curry powder
- 2 tbsp turmeric powder
- 2 tsp salt
- Plain or corn flour to thicken
- *Other vegies can be added: red or green chilies, broccoli stems, corn, capsicum or zucchini. If extra is added, use an additional half a cup of vinegar.
How to cook:

- "You go small or chunky - soft or crunchy - any thickness. It's just a matter of having a go at it."
- Chop vegies to required size (eg 1cm dice) and set aside. Place other ingredients in a large pot and stir continuously until the sugar dissolves.
- Bring to the boil. Drop vegies into the liquid, stirring occasionally. Return to the boil then simmer gently until vegies are the required texture. Add enough flour to thicken to your liking and boil rapidly for a few minutes. Bottle hot in sterilised jars or bottles and seal when cooled.

How to cook:
- Combine the first 4 ingredients in a kettle.
- Tie the Allspice and Cloves in a cheesecloth bag and add to the kettle.
- Bring to a boil.
- Add the tomatoes and onions.
- Boil, uncovered, for 5 minutes or until just tender, lifting the slices from the bottom to the surface with a fork during cooking.
- Drain, reserving the liquid, remove the bag and pack the pickles into clean, hot preserve jars.
- Reheat the liquid to boiling and pour at once into the jars over the pickles.
- Seal, adjusting the lids as the manufacturer directs.
- Process in a hot water bath, the timing adjusted to your conditions.
