Easy Grilled Chicken Sandwiches

This recipe comes to us from FDP team member Bri DeRosa and her blog Red Round or Green. These sandwiches are a knock-off of a simple sandwich that I ate at restaurants as a kid. You can add mayo or mustard or whatever you like on your chicken sandwiches; for me, it’s the plain-Jane version with just some good lettuce and tomato that does the trick. The marinade is also a fabulous salad dressing, so you can make extras and store in a mason jar in the refrigerator — it will last for weeks that way.

- 2 lbs. boneless, skinless chicken breasts, cut into roughly 4-oz portions (you want the chicken to fit the buns, essentially) Marinade: 1 tablespoon garlic powder 1 tablespoon dried oregano 1 1/2 tsp. salt 1/2 tsp. black pepper 1/2 tsp. crushed red pepper flakes 2 tsp. honey 6 tablespoons red wine vinegar 6 tablespoons olive oil Sandwich buns of your choice, preferably lightly toasted or grilled Lettuce leaves Sliced tomatoes
How to cook:
- 1. Whisk the ingredients for the marinade in a medium bowl until thoroughly combined. 2. Pour over the chicken and toss to coat. 3. Cover and refrigerate for a minimum of 2 hours, and up to 8 hours. 4. Grill the chicken breasts over medium heat for 12-14 minutes, just until cooked through. 5. Allow the chicken to rest for 5-10 minutes before making the sandwiches. 6. Pile a few lettuce leaves, several slices of tomato, and a piece of chicken onto a lightly toasted bun. - Place your hand on top of each chicken breast and carefully slice each breast in half, lengthwise. Use kitchen scissors or a knife to trim any excess fat from the chicken.

- In a medium bowl combine the lemon, olive oil, italian seasoning, garlic powder, salt, pepper and honey and mix well to combine.

- Place the chicken into a bowl of shallow dish and pour the marinade over the chicken. Cover and marinate for at least 30 minutes.

- Heat up a grill, grill pan or cast iron pan to medium heat and add some oil to prevent sticking. Lay the chicken onto the pan and cook each piece for 3 minutes per side until the internal temperature reaches 165 degrees F. Continue until you have cooked all 4 pieces of chicken.

- To make the sauce, add all ingredients to a small mixing bowl and mix well to combine into a thick, silky sauce.

- To build the burgers, spread some sauce onto each half of the buns, layer on the lettuce, add the cooked chicken and then top with sliced tomato, red onion and the other half of the bun.

- One at a time, lay the chicken breast inside a freezer bag or between two sheets of parchment paper. Use a meat mallet or rolling pin to gently pound the chicken to a 1/2-inch thickness. Use a sharp knife to cut the chicken into 4 equal pieces.
- Combine the salt, paprika, garlic powder, and black pepper in a small bowl. Season the chicken breasts with the mixture on both sides.
- Preheat the grill to medium-high heat. Lightly oil grate. Place the chicken on the grill and cook, covered, for 3 to 5 minutes per side. Cooking time will vary depending on your grill and how thick your chicken breasts are.
- Add a slice of cheese to the top of each chicken breast and cook for about 1 minute or until the cheese is melted. The chicken should reach an internal temperature of 165 degrees F. Transfer the chicken to a platter and cover with foil. Let rest for 5 to 10 minutes.
- Meanwhile, cut the onion into wedges, leaving the root partially intact so the layers stay together on the grill. Brush with olive oil and season with a little salt and pepper. Place the onion pieces on the grill and cook until tender, turning once. This will take about 8 to 10 minutes.
- To toast buns, place cut sides down on grill during last minute of cooking time.
- To assemble the sandwiches, top the bottom buns with a piece of grilled chicken and drizzle generously with hot honey. Top with grilled red onions, peach slices, bacon slices, and arugula. You can add candied jalapeños, if desired. Add the top bun and serve immediately.

- Preheat grill to medium-high heat.
- Prick chicken breasts all over with a fork. Place chicken breasts, 1/4 cup olive oil, white wine vinegar, lemon juice, garlic and herb seasoning, ground black pepper, and chopped fresh dill in a bowl. Stir to coat chicken breasts completely. Let stand for 10 minutes.
- Remove chicken breasts from marinade, discard marinade, and grill chicken for 10 to 15 minutes on each side, or until juices run clear and an instant-read meat thermometer inserted into the thickest part of a breast reads at least 160 degrees F (70 degrees C). Remove from grill; let stand for 5 minutes. Cut chicken breasts in half.
- Melt butter and 2 tablespoons olive oil in a skillet over medium-high heat. Sprinkle garlic powder and salt over butter and oil. Add French bread slices to the pan and toast until golden brown on one side, about 3 minutes; remove from pan.
- For sandwich assembly, place one slice of French bread with toasted side down onto a serving plate. Spread mayonnaise on bread; top with a slice of tomato, salt and ground black pepper to taste, half a grilled chicken breast, and lettuce. Spread untoasted side of another slice of bread with mayonnaise and place on top to make a sandwich.
