You can make nearly any kind of sandwich using your family’s favorite ingredients: tuna and cheddar, steak and provolone, or mozzarella and tomato with pesto, to name a few. This sandwich is made with sourdough bread, swiss and mozzarella cheese, then grilled and pressed to perfection.

Ham and cheese is a classic sandwich combination. We give this panini a slight French flair by adding Dijon mustard and cheese sauce (Mornay), which melt into a perfectly oozy filling.

- 1 tablespoon (14g) unsalted butter
- 1 tablespoon (7g) King Arthur Unbleached All-Purpose Flour
- 3/4 cup (170g) milk hot
- 3/4 cup (85g) Swiss cheese or Gruyère cheese grated
- 8 ounces (227g) cooked ham thinly sliced
- 8 ounces (227g) Swiss cheese thinly sliced
- 2 tablespoons (28g) Dijon mustard optional
- 6 tablespoons (85g) soft butter optional
- 8 center slices Rustic Sourdough Bread or you favorite panini bread
How to cook:
- To make the sauce: Melt the butter in a saucepan set over medium-high heat.
- Add the flour, stirring to incorporate. Slowly pour in the milk, stirring constantly, until a thick sauce forms.
- Bring to a gentle simmer then add the cheese, stirring until it melts.
- To make the sandwiches: Spread the warm sauce on one side of half the bread slices.
- Top the sauce with a slice of ham, then a slice of cheese.
- Spread the Dijon mustard on one side of the remaining slices of bread, and place them mustard-side-down onto the cheese.
- Heat an electric panini griddle or skillet over medium-high heat.
- Spread the top of the sandwich with butter, and place it butter-side down onto the hot surface.
- Spread butter on the other side of the bread, then close the griddle or cover the pan with a lid.
- Toast the sandwich for 3 to 5 minutes on one side, flip it over, and toast for another 3 to 5 minutes until it's as golden as you like. Remove from the pan, and serve warm.

- 1 teaspoon butter (Melted)
- 1-2 tablespoons Primal Kitchen Ham Glaze
- 2 slices swiss cheese
- 2 oz sliced ham
- fresh spinach or lettuce
- cooking oil (If using a cast iron or grill pan. I use olive oil.)

- Spread the butter over both slices of bread.
- Flip the bread slices and spread the ham glaze over the other sides. Add the ham, cheese, and spinach, to the bread and form a sandwich.
- Panini Press
- Add the sandwich to a panini press and press down firmly for 5-10 seconds. Allow the sandwich to cook for 3-4 minutes or until golden.
- Air Fryer
- Add the sandwich to the air fryer basket. Anchor the sandwich with a trivet (you can use anything that's oven safe) to prevent it moving around in the air fryer.
- Air fry on 370 degrees for 5 minutes.
- Open the air fryer fry and flip the sandwich. Air fry on 370 degrees for an additional 3-4 minutes or until crisp.
- Pan or Grill Pan Skillet (A cast iron works best)
- Heat the skillet on medium-high heat. Glaze the pan with olive oil to prevent sticking. Use enough to coat the surface you will be using.
- Add the sandwich to the pan.
- Cook both sides for 3-4 minutes each or until crisp.

- 8 slices sourdough bread or pain au levain, each 1/2 inch thick
- 3 Tbs. unsalted butter, at room temperature
- 24 small, thin slices Gruyère or white cheddar cheese
- 8 thin slices ripe beefsteak or other large tomato
- Kosher salt and freshly ground pepper, to taste
- 4 to 8 thin slices country-style ham
How to cook:
- Preheat a stovetop panini grill, a heavy sauté pan or a ridged stovetop grill pan over medium heat, or preheat an electric panini grill according to the manufacturer’s instructions. Match up the bread slices, creating 4 even pairs, and then lightly butter the outside of each slice. For each sandwich, place 1 bread slice, buttered side down, on a work surface and layer with 2 cheese slices, then 2 tomato slices. Season with salt and pepper, then add another 2 cheese slices, 1 or 2 ham slices and then 2 more cheese slices. Top with the remaining bread slice, buttered side up. (At this point, you can wrap the sandwiches and refrigerate them for up to 1 day.)
- Working in batches if necessary, place the sandwiches in the grill and close the top plate, or place in the sauté pan or grill pan and press down firmly with a flat, heavy pot lid. Cook the sandwiches, turning once at the halfway point if using a stovetop pan, until the bread is golden and toasted and the cheese has melted, 10 to 14 minutes total. Cut the sandwiches in half and serve immediately. Serves 4.

- Turn the panini maker on.
- Slice your bread roll in half.
- Mix together 1 tablespoon of butter and 1 teaspoon of yellow mustard until it is incorporated.
- Spread the mustard-butter mixture on the panini bread evenly.
- Place the ham on the panini bread, followed by the cheese, making sure the filling is tucked inside the sandwich and not hanging out.
- Place the panini in the panini maker for three to four minutes.
- After three to four minutes, take the panini out of the appliance and place onto a chopping board.
- Slice in half, place on plate, and enjoy.
