Mixed Pea and Ham Soup

Ingredients:
  • 1 cup dried green split peas, cooked
  • 1 1/3 cups frozen peas
  • 100 g potato, finely chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, crushed
  • 3 1/4 cups hot vegetable stockBlanched edamame beans, choppedleg ham and pine nuts, to serve
How to cook:
  1. Place the cooked split peas, frozen peas, potato, onion, garlic and stock into the Soup Maker Jug. Season with salt
  2. Place the Lid on and select the Chunky setting, then Press start.
  3. When cooked through, press and hold the Smoothie/Blend Button. Repeat as necessary until desired consistency is achieved.
  4. Pour soup into serving bowls. Top with edamame, ham and pine nuts to serve

Ham and Potato Soup

Ingredients:
  • 600 g potatoes, peeled and diced
  • 150 g cooked ham, diced
  • 1 onion, sliced
  • 1 tsp dried thyme, or any herbs of your choice
  • 800 ml vegetable stock
How to cook:
  1. Add all the ingredients to your soup maker and set off on chunky.
  2. The end result may be a little thin. You can make it thicker by either adding in some flour & butter (as a roux) or do as I did and do a few very short blends manually via the soup maker functions. Make sure you don't blend for too long (a few seconds max each time) or you'll blend it smooth and not have any chunky bits left. This method is a really quick and easy way to thicken up a chunky soup.

Ingredients:
  • For boiling the Ham Hough
  • Simon Howie Smokey Ham Hough 750g
  • 1 large onion, thickly sliced
  • 1 head garlic, cut in half horizontally
  • 2 carrots, cut into chunks
  • 1 stick celery, cut into chunks
  • 3 sprigs parsley
  • 1 sprig thyme
  • 6 whole peppercorns
  • 1 bay leaf
  • For the soup
  • 25g butter
  • 400g garden peas
  • 1 large bunch flatleaf parsley, roughly chopped
  • 750ml ham stock (from above)
  • 150ml double cream
  • 2 garlic cloves, halved
  • Salt and black pepper to season
How to cook:
  1. Method
  2. 1. Place the hough in a deep saucepan along with the onion, garlic, carrots, celery, peppercorns and herbs and simmer for 1.5-2 hours.
  3. 2. Take off the heat and remove the ham from the stock, allowing it to cool for 30 minutes before shredding the meat from the bone. Reserve the ham stock to make the soup.
  4. 3. Next, heat a large pan and add the butter, peas and parsley then stir in 75oml of the stock, the double cream and bring to a simmer.
  5. 4. Once cooked and the parsley begins to wilt, remove from the heat.
  6. 5. Puree in a blender or with a hand-held blender, season and serve topped with shredded ham.

Pea and ham hock soup

Ingredients:
  • 1 tbsp butter.
  • 1 tbsp olive oil.
  • 1 onion, finely chopped.
  • 2 large potatoes, peeled and diced.
  • 2 double smoked ham hocks, chopped into large pieces.
  • 400g frozen peas.
  • Chicken stock to cover (about 6 cups).
How to cook:
  1. In a large pot, heat the butter and olive oil over medium heat. Add the onion and potatoes and saute until the onion is soft. Add the ham hocks, peas and stock to cover. Bring to the boil then turn the heat down and simmer for about 1 1/2 hours, partially covered.
  2. Remove the ham hocks, discard the bone and skin, shred or dice the meat and return to the pot. (Option: Before returning the meat to the pot, puree about 1/4 of the soup with a few spinach leaves to give it a vibrant green colour.) Heat through.
