I make this dish often; I have never really measured the ingredients, but can give you a reasonable approximation. Note: Freeze leftover cooking liquid, and then add to bean soup, ham or cabbage dishes, or use to cook dumplings in. It's delicious!

  • 2 pounds fresh green beans, rinsed and trimmed
  • 1 large onion, chopped
  • 3 ham hocks
  • 1 ½ pounds new potatoes, quartered
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon seasoning salt
  • 1 tablespoon chicken bouillon granules
  • ground black pepper to taste

How to cook:
  1. Halve beans if they are large, place in a slow cooker with water to barely cover, and add onion and ham hocks. Cover, and cook on High until simmering. Reduce heat to Low, and cook for 2 to 3 hours, or until beans are crisp but not done.
  2. Add potatoes, and cook for another 45 minutes. While potatoes are cooking, remove ham hocks from slow cooker, and remove meat from bones. Chop or shred meat, and return to slow cooker. Season with garlic powder, onion powder, seasoning salt, bouillon, and pepper. Cook until potatoes are done, then adjust seasoning to taste.
  3. To serve, use a slotted spoon to put beans, potatoes, and ham into a serving dish with a little broth.

How to cook:
  1. Heat olive oil in a Dutch oven over medium heat. Sauté onion and garlic until just softened, about five minutes.
  2. Add in the green beans, broth, and ham hock. Add water until it just covers the beans. Bring to a boil and then reduce heat and simmer for 35-45 minutes, or until the cooking liquid turns a deep green/brown and beans are well-done.
  3. 20 minutes into simmering, add potatoes and additional ham, if using.
  4. Remove ham hock or ham bone, chop ham off the bone, and return to the pot—discarding the bone. Season with salt and pepper to taste.
  5. Serve by straining cooking liquid using a slotted spoon.

How to cook:
  1. Add the ham hock (or ham chunks) to the bottom of the crock pot, then pour in the green beans, water, and potato chunks. Don't cut the potatoes too large, or they will have a hard time getting done when everything else is ready. I like to go for 1 inch or smaller.
  2. Next, you will add the thyme, garlic powder, onion powder, black pepper, salt, cloves, and cinnamon. Mix together thoroughly, and then drizzle with a bit of oil (1-2 tablespoons) before covering.
  3. Cook on high for 4 hours or on low for 6-7 hours. This all depends on whether you'll be home or not and how quickly you need it to be done. Don't overcook, as the green beans will turn to mush. You do want the potatoes to get done, though.
  4. Once the green beans and potatoes are cooked, you will remove the ham hock and let it cool a bit before dicing up the ham. Turn the crockpot on the warm setting while cooling and cutting up the ham pieces. Add the ham pieces back in and serve.

  • 2 pounds ham, diced into chunks

How to cook:
  1. SLOW-COOKER:
