Slowly cooked and roasted smoked ham hocks are another one of my favorite cool weather foods. This recipe takes on a Canadian flair with a maple glaze on the hock and potatoes.A very simple, inexpensive and highly satisfying main course.This recipe uses a ham hock of about 1.2 kg (2.6 lb)

  • 1 smoked ham hock (2 if small)
  • 0.5 - 1 Kg (1 - 2lb) potatoes
  • 3 garlic gloves
  • 1 Onion (chopped into 8 pieces)
  • 3 Cloves optional cut into quarters
  • 5 ml (1 tsp) Fresh chopped ginger
  • 2-3 bay leaves
  • A few pepper corn
  • 5 ml (1 tsp) thyme
  • 5 ml (1 tsp) paprika
  • 2.5 ml (1/2) tsp coriander
  • 120 ml (1/2) cup butter, melted
  • 60 ml (1/4) cup mayonaise
  • 60 ml (1/4) cup dijon mustard
  • 60 ml (1/4) cup maple syrup
  • Salt and pepper to taste
  • Calories: 600 kcal
  • Serving Size: 1 serving
How to cook:
  1. Place ham hock, onion, pepper corns, clove of garlic, ginger (optional cloves) and bay leaves into a suitable Dutch Oven or Casserole
  2. Add a few cups of water and bring to a boil. Skim off the foam.
  3. Season with salt and pepper.
  4. Cover the Dutch Oven or Casserole and slowly simmer for 2-3 hours depending on the size.
  5. Take out the pork hock and place it on the baking tray.
  6. Prepare the glaze by combining mustard, mayonnaise and maple syrup.
  7. Add peeled and cut potatoes to the baking tray with ham hock.
  8. Add chopped garlic and season everything with paprika, thyme, coriander, salt and pepper.
  9. Using the cooking brush cover everything with the glaze.
  10. Preheat the oven to 215 C (420 F).
  11. Melt ½ cups of melted butter and pour it over potatoes.
  12. Roast pork and potatoes until browned for about 20 minutes.
  13. Carve and serve

  • 4 ½ pounds russet potatoes, chopped (about 10 cups)
  • 2 pounds smoked ham hocks (about 3 ham hocks)
  • 2 cups chopped yellow onion (from 1 medium onion)
  • 1 cup chopped celery (from 3 stalks)
  • 2 tablespoons minced garlic cloves (about 4 garlic cloves)
  • 2 tablespoons chopped fresh thyme
  • 2 ½ teaspoons kosher salt
  • 1 teaspoon black pepper
  • 5 cups chicken broth
  • 1 cup heavy cream
  • Chopped fresh chives
  • Hot sauce
How to cook:
  1. Place potatoes, ham hocks, onion, celery, garlic, thyme, salt, and pepper in a 7-quart slow cooker; add broth, and stir to combine. Cover and cook on HIGH until potatoes are tender, 4 hours. Remove ham hocks, and place on a plate to cool 15 minutes.
  2. Puree soup in slow cooker with an immersion blender until it's creamy but whole pieces of potato are still visible. Add cream, and stir. Once ham hocks are cool enough to handle, remove all meat and chop; discard fat and bone. Add meat to soup, and stir to combine.
  3. Ladle soup in bowls; top with chopped chives and a dash of hot sauce.

  • 750 milliliters clear Beef broth (premade)
  • 1 Tbsp brown sugar
  • 3 bay leaves
  • 1 kilogram Rutabaga
  • 750 grams waxy potatoes

How to cook:
