  • 2 cups quick oats
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed banana (from approximately 2 large or 3 medium overripe bananas)
  • 1/2 cup peanut butter (or your favorite nut or non-nut butter, like almond butter or sunflower seed butter)
  • 2 tablespoons honey
  • 1 teaspoon vanilla
  • 1/2 cup chopped pecans (or your favorite nut)
  • 1/4 cup chocolate chips or raisins (optional)

How to cook:
  1. Position rack in center of oven and preheat to 350°F. Line a baking sheet with parchment paper and set aside.
  2. Measure oats, cinnamon, baking powder, baking soda, and salt into a large bowl; whisk to combine. Stir in mashed banana, peanut butter, honey, vanilla, pecans, and chocolate chips. Scoop dough using a scant 1/4-cup measuring cup for form 12 cookies. Flatten the top of each cookie on the baking sheet and bake for 14 to 16 minutes. Allow cookies to cool completely on baking sheet before storing in an airtight container.

How to cook:
  1. Preheat oven to 350 degrees Fahrenheit. Line a large baking sheet with parchment paper and set aside.
  2. Prepare cookie dough: In the bowl of a food processor, add the oats and coconut. Pulse until finely chopped, about 18 pulses. (The ingredients should be broken down, but not so processed they resemble flour).
  3. Add wet ingredients
  4. Add the banana, honey, nut butter, cinnamon, vanilla, baking powder and salt. Process, stopping once to scrape down the sides of the bowl, until the mixture resembles a wet, sticky dough.
  5. Add chocolate chips
  6. Add in your favorite additions. Pulse until just combined.
  7. Scoop dough
  8. Scoop cookie dough: Use a cookie scoop or large spoon to drop a spoonful (roughly 1 ½ tablespoons) of cookie dough onto prepared baking sheet. Repeat with remaining dough.
  9. Shape cookies: Use the back of a spoon or your hand to gently flatten each cookie ball slightly. Note: The cookies will not spread or flatten during baking, so make sure you flatten them now. (SEE NOTES) OPTIONAL: Top the cookies with a bit of your favorite topping, gently pressing to adhere to the cookies.
  10. Bake for 16-18 minutes, or until the bottom edges are lightly golden in color.
  11. Cool: Remove from oven and allow cookies to cool on the pan for 5 minutes. Transfer the cookies to a wire rack and allow to cool for an additional 15 minutes.
  12. Serve and enjoy! Store leftover cookies in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.

How to cook:
  1. Preheat your oven to 350 degrees. Prepare a sheet pan with parchment paper, and set aside.
  2. In a mixing bowl combine oats, mashed bananas, peanut butter, cinnamon, and salt. Mix together with rubber spatula and add ½ cup chocolate chips. Mix again.

How to cook:
