  • 1/2 cup chicken broth
  • 2 tablespoons organic tamari ((gluten-free soy sauce))
  • 2 tablespoons honey
  • 2 teaspoons cornstarch
  • 1 teaspoon crushed red pepper flakes
  • 3 cloves garlic, (minced)
  • 1 tablespoon grated ginger
  • 2 tablespoons avocado oil, (divided)
  • 2 boneless, skinless chicken breasts, (cut into bite-sized pieces)
  • 2 cups broccoli florets
  • 2 cups sliced white button mushrooms
  • 1 red bell pepper, (thinly sliced)
  • 2 green onions, (thinly sliced)

How to cook:
  1. In a small bowl, whisk together the broth, tamari, honey, cornstarch, red pepper flakes, garlic, and ginger. Set aside.
  2. In a large wok or skillet set over medium-high heat, heat 1 tablespoon of the oil.
  3. When the oil is hot, add the chicken and cook for about 3 minutes or until chicken is cooked through. Transfer chicken to a plate and set aside.
  4. Add the remaining tablespoon of oil to the skillet. Add the broccoli, mushrooms, and red bell pepper. Stir-fry for about 3 minutes or until tender-crisp.
  5. Return chicken to skillet. Add the stir-fry sauce and stir-fry for another 1-2 minutes, until the chicken and vegetables are well coated.
  6. Stir in green onions. Serve warm with cooked rice.

  • 1 14 oz. Extra firm tofu (sqeezed dry and cut into 1 inch cubes)
  • 2 tsp olive oil
  • 2 tbsp soy sauce
  • 1 head broccoli (cut into florets)
  • 1 red bell pepper (cut into bite sized strips)
  • 4 celery stalks (chopped bite sized)
  • 4 medium carrots (peeled and cut into 2 to 3 in. strips)
  • 1 lg. garlic clove (minced)
  • 1 tbsp olive oil (for sauteing vegetables)
  • 4 green onions (chopped for garnish)
  • 12 oz. boneless, skinless chicken breasts (or boneless, skinless thigh meat) (cut into bite sized pieces)
  • 1 or 2 tbsp low sodium soy sauce (for cooking chicken)
  • 3/4 cup low salt chicken broth (substitute vegetable broth) (divided)
  • 3 tbsp low sodium soy sauce
  • 1 1/2 tbsp sesame oil
  • 1 tbsp rice wine vinegar
  • 1 tsp sriracha sauce
  • 1 tbsp cornstarch (dissolved in 1/4 cup chicken broth)
  • 1 cup basmati rice or other rice (cooked to package directions)

How to cook:
  1. Preheat oven to 350°.
  2. Drain and dry tofu, cut into 1" cubes and place in a bowl with olive oil and soy sauce. Mix well and place on a baking sheet and put in the oven 20 to 25 minutes until browned. Remove and keep warm.
  3. Place broccoli, celery, bell pepper and carrots into a skillet with 1 tbsp olive oil on medium heat and saute until softened, 12 to 15 minutes. Remove to a bowl.
  4. In the same skillet, add 1/2 cup broth, soy sauce, sesame oil, vinegar, sriracha, and minced garlic bring to a simmer then stir in the cornstarch dissolved in 1/4 cup broth. Bring to a low boil 2 minutes and add the vegetables back to the skillet and combine well.
  5. In a separate non-stick skillet on medium heat, place chicken and stir to brown, 2 minutes. Add 1 or 2 tbsp. soy sauce and cook until the chicken is done, 2 to 3 more minutes.
  6. Plate the vegetables with desired protein with rice on the side. Add green onion for garnish and additional soy sauce.

  • 1 cup brown rice (uncooked)
  • 2 large carrots (sliced)
  • 1 cup green beans (sliced)
  • 1 cup broccoli (chopped)
  • 1 capsicum (sliced)
  • 1 bunch asparagus (sliced)
  • 2 spring onions (sliced)
  • 500 grams chicken (diced)
  • 1 tbsp sesame oil
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1/2 cup roasted cashews
How to cook:
  1. Cook rice as per packet instructions.
  2. Lightly steam carrots, beans and broccoli, until soft but still crisp.
  3. Heat sesame oil in large fry pan on high heat, and brown the chicken.
  4. Remove chicken from pan and set aside.
  5. Add capsicum to fry pan and sauté for 2 minutes; add remaining vegetables and sauté for a further 2 minutes.
  6. Add chicken to pan and add sauces, sauté for 5 minutes.
  7. Portion into 4 bowls with brown rice and sprinkle cashews on top.
  8. You can also portion into plastic tubs and store in the fridge for 2-3 days to enjoy for another meal.
