Ingredients:
- 1 1/2 cups broccoli florets
- 5 eggs
- 2 cups whole milk*
- 1 tsp. dijon mustard
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1 cup cheese ((I use cheddar or a gruyere/Swiss blend) )
- 1 1/2 cup ham cubes

- Preheat oven to 350° F (177° C).
- Heat broccoli florets in a small sauté pan over medium heat and dry sauté without any oil for 5-10 minutes until cooked and starting to lightly brown.
- While broccoli is cooking, crack eggs into a medium sized bowl. Add milk, mustard, salt, and pepper. Whisk with a wire whisk until bubbly and mixed thoroughly.
- Spread broccoli, ham, and cheese out in a silicone 9" round baking dish or a buttered 9" pie tin (make sure it is buttered thickly to keep from sticking). If using a silicone baking dish, make sure to put it onto a metal sheet pan to allow it to be easily put into and pulled from the oven.
- Pour egg mixture evenly into baking dish. Place pan in oven and cook for 35-40 minutes until quiche is cooked through, starting to lightly brown, but still jiggly in the center.
- Remove quiche from oven and let cool for 15 minutes before cutting and serving. Keep leftovers for 3-4 days in the refrigerator, reheating using the microwave.

- Preheat the oven to 350 degrees F and spray a 9-inch pie dish with cooking spray.
- Place the broccoli (chop it up if you prefer it in smaller pieces) in the bottom of the pie dish and top with the chopped ham, covering the bottom of the dish.
- Crack the eggs into a medium size bowl and whisk well until the mixture is bright yellow and you no longer see any egg whites. This takes about 30-60 seconds of whisking. Mix in the milk if using. Season the eggs with salt and pepper and pour them evenly over the broccoli and ham.
- Sprinkle the cheese on top and bake in the middle rack of the oven for 35-40 minutes until the eggs are set and firm in the middle and the edges are nice and golden brown (this gives it the crust taste and feel without adding the actual crust).
- Remove, let cool for a few minutes, run a butter knife around the edge of the pie dish to loosen it up, cut with a sharp knife to slice and serve warm.
- Top with chopped fresh parsley and chives for that diner-style look.

- 1 cup diced ham
- 1 cup broccoli florets (frozen or fresh)
- 4 eggs
- 4 egg whites
- 1/4 cup water
- 1 cup low fat cottage cheese (can use regular)
- Salt and pepper to taste
How to cook:
- Prepare a 9 " baking dish, pie dish or quiche dish with cooking spray.
- Heat oven to 375 degrees.
- Prepare your broccoli by pre cooking either in the microwave or on the stove top.
- Dice the ham while the broccoli is cooking.
- Using a large bowl, whisk the eggs, egg whites and water.
- Now add the cottage cheese and whisk with intent! You want the cottage cheese to become fairly smooth and mix in with the egg mixture.
- Pour into prepared dish. Place the broccoli and ham into the mixture.
- Bake for 30 to 35 minutes. Check at the 30 minute mark.
