Ingredients:
- 1 lb ground chicken breast (92/8)
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp ground sage
- 1/2 tsp garlic powder
- 1/2 tsp dried thyme
- 1/4 tsp ground nutmeg
- 1/4-1/2 tsp red pepper flakes
- 1 tsp brown sugar or coconut sugar (optional but delicious!)

- In a medium bowl, mix together all spices. Add in the ground chicken and mix spices through the meat with a spatula. Try not to overmix.
- Refrigerate at least an hour, but overnight for best results.
- Divide in 12 1/4-inch thick patties. Each one is about 2 rounded tablespoons.
- TO COOK ON THE STOVETOP
- Spritz a large skillet with cooking spray. Over medium-high heat, sear the patties, about 1-2 minutes per side.
- Add 3 tablespoons of water to the skillet to deglaze. Flip the patties around in the liquid until it is completely absorbed into the meat. This will add color and moisture to the sausage.
- TO COOK IN THE AIR FRYER
- Preheat air fryer to 400F. Spritz both sides of the patties with cooking spray, then add in a single layer to the air fryer basket. You'll probably need to cook in batches.
- Cook for 8-10 minutes, flipping halfway through.
- TO FREEZE THE SAUSAGE
- Let patties cool completely. Arrange in a single layer on a cookie sheet. Cover with plastic wrap or tin foil.
- Place cookie sheet in freezer until the patties are frozen through, about an hour. Remove frozen patties from cookie sheet and place frozen in a freezer bag.
- Reheat in the microwave for 20-30 seconds, or air fry at 350F for 5-7 minutes.

- 1 small onion chopped or ½ large onion
- 2 cloves garlic (minced or chopped)
- 1 lb breakfast pork sausage or another breakfast sausage*
- 1 large apple (seeded, cored, and chopped)
- 24 ounces carrot noodles (2 boxes frozen TJ’s Carrot Noodles)
- Salt and pepper to taste
- Optional garnish with 2 tablespoons chives.

- Directions:
- Add onion, garlic and pork breakfast sausage to skillet. Cook over medium heat until pork sausage is cooked all the way through.

- 2 whole eggs
- sprinkle of cheddar cheese
- salt & pepper to taste

How to cook:
- Start by cracking two eggs into a bowl and scramble with a fork until all mixed together

- Mix all the spices together in a small bowl The brown sugar sweetener is sticky and may clump so make sure to mix it well to break it down.
- Place the ground turkey in a large bowl and sprinkle half of the spices over evenly top. I like to use a large serving fork to mix up the ground meat and spices together since turkey can be very sticky. After it's mixed add the rest of the spices, evenly and mix once more trying not overwork the meat yet get it well combined.
- Get out 2 pieces of wax papper. Spray one with nonstick cooking spray and set aside. Divid the meat mixture into 16 equal sized balls. Place them on a piece of wax paper with space between them. Take the sprayed piece of wax paper and place on top and press down to make patties.
- Get out a large nonstick skillet and heat to medium high heat. Spray with nonstick cooking spray first. Gently lift the raw turkey patties off the wax paper and into the pan. Turn the heat down to medium and cook for 3 minutes. Then flip and brown the other side for about 3 minutes more. Just make sure the sausage is cooked through. Mine took about 6 minutes total but cooking time will vary depending on the thickness of your patties.
