Ingredients:
  • 2 x 400 g condensed milk
  • 2 x 250 g sweet plain biscuits
  • 3 cup desiccated coconut
  • 1/2 tbs cocoa powder
How to cook:
  1. Crush biscuits until powdery.
  2. Place biscuits, condensed milk and 1 tablespoon of coconut into a bowl. Mix together until well combined.
  3. Roll medium sized balls of mixture into remaining coconut. Refrigerate for 15 - 20 minutes.

Healthy Vegan Rum Balls

  • 1 1/2 cups (180 g) raw pecans (or almonds)
  • 1 1/2 cups (300 g) packed, pitted soft dates
  • 2 1/2 tbsp rum extract (see notes)
  • 1 tsp pure vanilla extract
  • 1/3 cup (35 g) cacao powder
  • 2 tbsp (30 mL) pure maple syrup
  • 2 tbsp (30 g) almond butter
  • 1/2 cup roughly chopped (85 g) dark chocolate or dairy-free chocolate chips
  • optional: shredded coconut or cacao powder for rolling

How to cook:
  1. Place the pecans in a food processor or high-powered blender and process until they form a fine flour.
  2. Add the dates, rum extract, cacao powder and vanilla extract and mix to combine.
  3. Melt the dark chocolate, almond butter and maple syrup together in the microwave or in a small saucepan on the stovetop until smooth then pour over the rest of the ingredients.
  4. Process until it forms a thick dough.
  5. Roll into approximately 22 balls (if it’s too sticky, place the dough in the fridge for 20 minutes before rolling).
  6. Roll the balls in shredded coconut or cacao powder, if desired.
  7. Serve or store in a sealed container in the fridge for up to 1 week or freezer (recommended) for up to 3 months. Keep cold until just before serving. They’re ok at room temperature for 1-2 hours but will start to get soft if it’s warm.
Notes: Chocolate Rum Balls I Recipe, Had no corn syrup and used honey instead. I've never had rum balls rolled in icing sugar or cocoa, so try it in the dessicated coconut,

Ingredients:
  • 2½ cups finely crushed vanilla wafer cookies
  • 2 cups powdered sugar
  • 2 Tbsp cocoa powder (finest quality you can buy)
  • 1 cup finely ground nuts (almonds or walnuts, per your preference)
  • 3 Tbsp light corn syrup
  • ¼ cup flavorful rum (alternate non-alcohol choices: see final line of recipe)
How to cook:
  1. In a large bowl, thoroughly mix crushed cookies, 1 cup powdered sugar, cocoa powder, and finely ground nuts. (Set aside the 1 cup of remaining powdered sugar in another bowl.) Add syrup and rum liquor (indulging in a splash or two more if you desire an intense flavor); then thoroughly combine. Scoop approximately 1 Tbsp of mixture into the palm of your hand. Using both your palms, roll each scoop into a perfect ball, while using a pressing motion. Consider using plastic gloves, which makes rolling the balls easier. Then place each ball into the powdered sugar bowl, roll again lightly around, and place on a large platter or kitchen sheet. When finished, put platter or sheet of chocolate balls into the refrigerator to help them set, covered with plastic wrap, approximately 1 hour. Store balls at room temperature in a covered, air-tight container to keep them moist, dusting with a bit more powdered sugar. Use wax paper between layers to prevent sticking. To make these chocolate balls without the rum liquor, use instead: 2 tsp rum flavoring or mint flavoring or vanilla flavoring; plus 1 extra Tbsp corn syrup and 2 oz water.
Notes: Cocoa Rum Balls Recipe, I was looking for a way to make these without the rum and they turned out great! The best way to crush the wafers is in a food processor.
