  • 12 ounce package hearts of palm rice (such as Palmini)
  • 1 teaspoon avocado oil
  • 1 tablespoon lime juice
  • 1/4 cup cilantro (minced)
  • salt and pepper (to taste)

How to cook:
  1. Thoroughly rinse the heart of palm rice under running water in a large fine mesh strainer. Set in the sink to drain.
  2. Heat a large pan over medium high heat and when hot, add the oil. When the oil is hot, add the drained rice and cook, stirring occasionally until no liquid remains, about 5-10 minutes total.
  3. Transfer rice to a serving bowl. Stir in lime juice and cilantro. Season to taste with salt and pepper.

Ingredients:
  • 250 g rice
  • 600 g hearts of palm
  • 2 onions ((140 g))
  • 100 g butter
  • 270 ml cream
  • 240 ml milk
  • 280 g celery sticks
  • 200 g grated cheese ((we used Gouda, but other sorts are also possible))
  • 2 tbsp flour
  • 130 g peas
How to cook:
  1. Cook the rice in salted water, until tender. You can also use rice from the day before.
  2. Meanwhile, cut the celery sticks into small cubes.
  3. Peal the onion and cut it into cubes of the same size as the celery sticks.
  4. Cut the hearts of palm into cubes of 0.5 – 1 cm. They should be bigger than the cubes of the celery sticks.
  5. Heat up the butter, add the onions and celery sticks and stir well.
  6. Add the flour and continue stirring.
  7. Add the hearts of palm and mix well.
  8. Add the milk and stir, then add the cream and continue stirring while the sauce is thickening.
  9. Add 60 g of the grated cheese, mix and add the peas.
  10. Now, add the cooked rice and stir.
  11. Bring to taste with salt and black pepper.
  12. Fill the rice mass into a baking dish and top it with the rest of the cheese.
  13. Bake it in the oven for 20 minutes on 200 degrees Celsius, until the cheese starts to get a golden color.

How to cook:
  1. Heat 1 tablespoon of butter and olive oil in a large, heavy-bottomed saucepan over medium-high heat. Add the onion; cook and stir until it begins to turn golden brown at the edges, about 2 minutes. Pour in the rice, and stir until the rice is coated in oil and has started to toast, 2 to 3 minutes. Reduce the heat to medium and stir in the white wine. Let it cook until it has mostly evaporated, then stir in one-third of the boiling vegetable broth; continue stirring until incorporated. Repeat this process twice more, stirring constantly. Incorporating the broth should take 15 to 20 minutes in all.
  2. When the rice is mostly tender, but still has a very slight crunch, stir in the hearts of palm and Parmesan cheese; season with salt and pepper. Cook for another minute to heat through then stir in parsley and butter, and serve immediately.
