Tim Tam Hedgehog Slice

  • 250 g plain sweet biscuits, such as Marie
  • 2 x 200 g packs Tim Tam biscuits
  • 200 g butter
  • 3 tbsp cocoa powder
  • ⅓ cup desiccated coconut
  • 395 g tin sweetened condensed milk
  • 200 g milk chocolate
How to cook:
  1. Line a 20cm x 20cm square baking tin (which has high sides) with baking paper. Make sure you leave plenty hanging over the edges to help you remove the Tim Tam hedgehog slice once it has set.
  2. Roughly chop 6 of the Tim Tams into large pieces and set aside until needed.
  3. Place the plain biscuits into a food processor and blitz until they have just broken up. Add the remaining whole Tim Tams (approximately 1 ½ packs) and blitz for 5 seconds or until they have broken into large chunks. Place the crushed biscuits into a large bowl and set aside.
  4. Pour the condensed milk into a small saucepan and add the butter and cocoa. Cook over a low heat, stirring occasionally, until the butter has melted and the ingredients have combined.
  5. Pour the condensed milk mixture into the bowl with the crushed biscuits and add the coconut. Working quickly, use a large metal spoon to mix the ingredients together.
  6. Pour the mixture into your prepared tin and flatten the surface with the back of a spoon.
  7. Break the milk chocolate into squares and place it into a microwave-safe bowl. Cook in the microwave on high for 30 second spurts (mixing in between), until it's just melted. Pour over the top of the slice and sprinkle the Tim Tams you set aside earlier over the top. Place the slice into the fridge for 6 hours (preferably overnight) to set.
  8. Once set, remove the slice from the tin and cut into pieces.

  • 1 cup walnuts
  • 1/2 cup dried dates (Soaked in hot water and drained)
  • 2 tbsp honey
  • 2 tbsp cocoa
  • 3 tbsp desiccated coconut
  • 1 cup puffed rice
  • 100 grams dark chocolate buttons
  • 1 tblsp coconut oil
  • Serving Size: 1 serving

How to cook:
  1. Line a loaf tin with baking paper. serves 16 150 calories per serve
  2. In a food processor blend walnuts, soaked dates, honey, cocoa and coconut.
  3. Transfer mix to bowl and mix through puffed rice. Press mix into tin.
  4. Set aside whilst you make the topping.
  5. Melt chocolate buttons and coconut oil together in the microwave in 30 second increments.
  6. Stir until combined, then pour over base.
  7. Move tin from side to side so that the topping evenly covers the base.
  8. Tap tin on bench, then put into freezer for ten minutes.
  9. Cut slice into 16 bars.
  10. Keep in fridge or freezer in an air tight container.

  • 395 g can sweetened condensed milk
  • 125 g unsalted butter, chopped
  • 1¼ cups dark baking melts
  • ¼ cup cocoa powder, sifted
  • 200 g Marie biscuits
  • ½ cup (80 g) chopped skinless, roasted hazelnuts
  • 2 cups vanilla-flavoured Mallow Bakes
How to cook:
  1. Grease an 18cm x 28cm slice pan. Line base and sides with baking paper, extending paper 3cm above pan edges.
  2. Place sweetened condensed milk, butter and baking melts in a small saucepan. Stir over a low heat and stir until smooth and combined. Remove pan from heat and stir in cocoa powder until combined.
  3. Place biscuits in a large snap-lock bag. Using a rolling pin, crush biscuits into coarse pieces. Transfer to a large bowl. Add hazelnuts and Mallow Bakes.
  4. Stir chocolate mixture into biscuit mixture until well coated and combined.
  5. Press mixture evenly onto base of prepared pan. Refrigerate overnight, or until set.
  6. Using extended baking paper, lift slice from pan onto a chopping board. Using a large sharp knife cut into small squares to serve.

How to cook:
  1. Line a 20cm square baking tin with cling film (plastic wrap). Make sure the clingfilm overhangs the edges which will make getting it out of the tin easier.
  2. Place the condensed milk. dark and milk chocolate and butter in a large microwaveable bowl and melt in the microwave in 30 second bursts (stirring in-between until melted).
  3. Put the crushed biscuits, cornflakes, desiccated coconut and cocoa powder in another bowl and pour on the melted chocolate mixture. Give everything a good stir.
  4. Press the mixture into the tin (use the back of a metal spoon to make sure it is compacted).
  5. Melt the topping ingredients together in the micorwave in 20 second bursts (stirring in-between). Pour onto the hedgehog slice and smooth with a palette knife.
  6. Place in the fridge to set for 2 hours.
  7. Take the tin out of the fridge about 20 minutes prior to cutting it. Lift up the overhanging clingfilm and place the slice onto a large chopping board. Use a sharp knife (dipped in boiling water between each cut) to cut clean slices. Store in the fridge.
