Ingredients:
- 2 to 3 vine-ripe tomatoes 1 medium cucumber 1 medium red onion, cut into rings 4 green onions, sliced 1 green bell pepper, cored and cut into rings 6 to 7 pepperoncini 8 to 10 Kalamata olives ¼ pound Greek feta cheese, cut into 1-inch strips Fresh chopped parsley (optional) 4 tablespoons extra-virgin olive oil 2 tablespoons red wine vinegar 1 teaspoon dried oregano Salt to taste

- 1 medium red onion, cut into rings
- 4 green onions, sliced
- 1 green bell pepper, cored and cut into rings
- 6 to 7 pepperoncini
- 8 to 10 Kalamata olives
- ¼ pound Greek feta cheese, cut into 1-inch strips
- Fresh chopped parsley (optional)
- 4 tablespoons extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt to taste
How to cook:
- Wash tomatoes and cut into wedges. Cut cucumber in half lengthwise, then cut into 1/8-inch pieces. Combine in a large bowl with the red onion, green onions, bell pepper, pepperoncini and olives and toss lightly. Add cheese and parsley, if using, and gently fold together a few times.
- In a small bowl, combine oil and vinegar and whisk to combine. Pour evenly over salad and fold a few more times. Sprinkle with oregano. Add salt if needed.
