If you have tried making the standard Yorkshire Pudding recipe it may have not been rather hockey puck like if you live at a high altitude (food science 101). Ingredients:
  • 4 eggs eggs (large size)
  • 1 ½ cups flour
  • 1 ½ cups milk
  • 1 tsp. salt
  • Oil for pans (or fat, beef drippings)
How to cook:

  2. Beat first four ingredients together to form a smooth batter and air bubbles form on the top. Stand for at least ½ hour at room temperature. Poor 1 tsp. of vegetable oil or drippings into each yorkshire muffin tin, or a regular muffin tin will also work, and place in a 425 degree oven until oil is very hot - almost smoking, being careful not to burn. Take out of oven and immediately pour batter into the tins - approx. 2/3 full and bake at 425 degrees for approximately 15-20 minutes, or when they look golden brown and have puffed right up.

Ingredients:
  • 1 cup of all-purpose flour
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup of milk
  • Fat of some kind for baking. Beef drippings, olive oil, shortening, or butter
How to cook:
  1. Preheat the oven to 425 degrees.
  2. Mix flour, milk, salt, and eggs in a bowl and whisk until most lumps are gone.
  3. Set batter aside
  4. Put a teaspoon of fat in each cup or muffin tin and put them in the oven for about 10 minutes so they are hot.
  5. Remove the baking vessels from the oven and shut the oven door to keep it hot.
  6. Fill baking cups halfway and return cups or tins to the oven as quickly as possible.
  7. Bake for about 25 minutes until desired shade of brown.
  8. Serve hot with roast beef or with butter and jam.
  9. The best way is to reheat them on a cookie sheet in a 350-degree oven for five or ten minutes.

  • 2 cups all-purpose flour
  • 2 cups milk
  • 1/4 cup vegetable oil
How to cook:
  1. 1. Preheat the oven to 450 degrees F (230 degrees C).
  2. 2. In a large bowl, whisk together the eggs and milk until well blended. Whisk in the flour one cup at a time until frothy and well blended. Set aside.
  3. 3. Distribute the oil equally among 12 muffin cups, a little over a teaspoon per cup. Place in the oven for 5 to 10 minutes, until smoking. Remove from the oven and quickly ladle about 1/4 cup of batter into each cup.
